I recommend buying the best smoker the first time and you’ll never regret it. I highly recommend driving up to Ponca City OK and talking to the professionals at Cook Shack. We got the ten dollar tour when we picked up our smoker and everyone was very very nice. The only problem people make is not buying one the next size bigger and never want for more room. We have three of their smokers in the family and my brother in law swears it’s the best piece of equipment he’s ever purchased.

I had a bullet smoker when I was 18, until midway into my 30s. You can get by with a little bullet smoker but it’s a toy compared to a proper offset or full size smoker. Once I got a proper offset smoker I had regrets not switching sooner… so much easier to keep at temp, used less charcoal, less wood and cooked food better: Smokers don’t have to be fancy, but you’re more likely to use it if it’s a nice experience.

@@Bar7Ranch I enjoyed your video today. My parents owned and operated a Locker for over forty five years. I started working there when I was thirteen. Remember for everything extra there are always additional charges. Customers complained about a $200 processing bill for a whole beef. Now processing is running over one dollar per pound hanging weight plus butchering. Another thing to remember is the more special cuts like ribs, soup bones and dog bones the more weight you’ll take home. But, you’ll wonder where all of your hamburger went to. I was surprised canning meat and ox tail weren’t mentioned.

@ Yep, we mentioned what there was an extra cost for and the fact that we wanted to cut down on the amount. Of ground beef we got this round. This is about year 15 for us so we definitely branched out this time to some new cuts!

When I was a kid my dad hated butchers because he felt they were dishonest. He eventually bought a walk in cooler and he started doing it himself. We mysteriously started getting more meat and quit getting oddly poor quality steaks mixed in with the good ones.

Wow, my family also experienced this EXACT same thing! My family also invested in a walk in and my father and 1 uncle went in halfs on it and they learned how to process our own beef and EXACTLY the same as you. We started getting Much more beef and the beef was all 1 Uniform color and not all sorts of different colors as if it was mixed from other mixed in.

Your best bet is a custom exempt butcher- because there is no retail store front. Not saying they're all dishonest, but it would be very easy to mix a little in with retail

We took livestock to a highly recommended butcher and started getting more 💩 cuts and less then there should've been. Then we to 2 hogs in and had beef roast in with our pork. Gonna do some of our own soon.

Great video. I was confused on my first steer and ended up getting things I didn't want because I didn't want to act like a newbie and ask a million questions...I've done 4 now and have it down...wish I had your video 4 years ago! primal ground beef is the best! Also, I didn't see it offered there but my processor does a sandwich meat cut, which is 1 or 2-pound bags sliced like subway or philly steak beef. Thanks for the video!

Thanks for the video, we have a ranch with a couple of hundred head of cattle, and typically get a couple butchered per year for home use, you gave us some ideas to ask our processor about, such as vacuum packing the ground beef.

This was the first time I have ever seen a custom cut processor offer different retail cuts. Most if not all in our area are lazy and want to cut everything into roasts. For those of us who don't like or eat roasts get left out of the fresh farm meat. The young lady in the shop knew her stuff, but there are still a few cuts I didn't hear her offer such as skirt steak, tri-tip, Denver steaks, and center round. These are some of the best steaks and need to be in a cut sheet. Glad I found your channel as I'm always looking at different ways of farming in different boards if the country.

@aquagamer1212 no not in my area skirt steaks are not usually even mentioned. They either get ground into hamburger or the meat packer gets them and substitutes a lesser cut for hamburger. Waist if the good butchers in my area have gone out of business due to age or tired of the struggle.

Marrow/knuckle bones, Redmonds salt and a splash of apple cider vinegar. Cook in the crock pot all day for delicious broth! You know you got all the goodies out of the bones if the broth turns to jelly when cool.

Tri Tip is pretty popular cut here in CA. It's great to throw on the BBQ. The grain of the meat runs different ways about half way so just pay attention while cutting. Enjoy

Agreed on get a smoker. Even an Old Smokey will do the job but are a nightmare to reload with a heavy brisket on it. I've only smoked 3 briskets in my life but all of them have come out great, and I need to get to Zepher and get a brisket there, as that one looked nice, and I drive by there a lot.

Erica take that osso buco and put it in a pressure cooker with some olive oil, onions, garlic, pinch of cumin, paprika, cayenne pepper, 1/2 a pinch of ginger, salt,and of course some pepper! Sauté your meat onions and garlic for about 10 minutes then cover with water. Cook for about 20-30 minutes. Release the pressure and cook down the sauce. Your lips will be smacking your Momma. We always have at least 5-6 packs of osso buco in our freezer!!

That was very interesting Cody. I know how to do a deer to have it processed, but have't seen a beef sheet. I had some of my axis deer made into chorizo and talk about good. It made the best soup as you didn't have to flavor it at all. Yummy! So on the price as you had yours done, what was the ball park price? Just curious. Thanks again!

Y’all don’t know brisket or tri tip? Tri tip you cook till 130-135 internal its sirloin. Brisket smoke to 165 wrap it take it to 205. Jiggle jiggle.

We “know” what brisket and trip tip are. We have never been smokers so haven’t smoked them. Our last butcher didnt offer tritip. For our brisket we either had someone smoke it for us or put it in the crock pot.

@ smoking tri tip is best no more than 135 internal. you can broil tri tip in the oven on both sides like a seer then finish bake at 400. Don’t go past 135 internal. Let it rest for 15min slice against grain. Tell me what you think. I also marinate my tri tip for 1-2 weeks in red wine, balsamic vinegar, olive oil, pineapple juice, kinders the blend, lemon lime juice. kinders lemon pepper, kinders Santa Maria if you can find it.

When you get your chuck eye steak take a strip of bacon and wrap it around your chuck eye and put a tooth pic in the bacon into the steak and put it on the grill. Gives it great flavor and tender and juicy. Hope you try it.

About $1200 for half a cow roughly. Just start googling it. That price includes the farmer raising the animal and then taking it to a butcher like this. It's a rough price. Keep in mind, you'd probably want a deep freeze at home and then a big cooler for transport from the farmer/butcher to your home. Those would be a part of your start-up prices.
