Thank you to those people working in there. I worked in the meat department of a local grocery store and that was some of the hardest longest days i put in. I only lasted 2 weeks

I’m sure it was hard work. I’ve hunted white tail deer all my life (68 yrs old) and processed all of them myself. A deer has the same cuts as a calf but heck of a lot smaller and the meat is very lean, no marbling. Processing a deer with knives and hand meat saws takes a lot of time and is hard work. A key element in processing meat is to have it chilled and not frozen.

1 of my daughter's really enjoyed her time in the "Meats Lab" when she was in College at VA Tech. She got to go through the entire process and went to the final retail cuts and packaging.

Love the video ! I live about 5hrs due east on 84 and will 100% be bringing business there, no local butchers here that offer that level of service ! And mostly can guarantee you that your getting you meat back !

Just picked up our beef two nights ago. Filets were amazing!! Curious though on the grading. Didn’t notice anything on our packaging if we got choice or prime? Very cool to see the process. Local Cuts was great to deal with, very accomodating coming 5.5hrs away and greatly appreciated Mike allowing a couple of the ladies to stay an extra few minutes so I could get our whole beef picked up. We will definitely be customers, as long as Cody & Erika have availability for us!

Skirt steak is also great meat for fajitas and other dishes of chucks. But on this piece of meat you have to cut it WITH the grain. The opposite of cutting into a ribeye.

The flank steak has to be cut with the grain also. U can tell really well on that flank the thick lines of grain

Ok, the flat iron steak does come from the arm. And I'm sorry, but pretty much everyone loves any steak with a salad, lol. The reason people like the flat iron so much, which it's my fav steak on the cow, it's the 2nd most tender muscle in the cow. Also, it is ONE of the best steaks by itself, if not the best steak. Now, that's my own opinion, but I've been a butcher for 10 years, so meat is my thing lol

Also the bearded butchers when they have meat that is not really used to make steaks or whatever and fat they use to make hamburger or sausage but they don’t mix the animals. Only one cow meat for a package of hamburger or if they make sausage they only use the same cows meat. They don’t mix the animals in case of any problems that may happen when customer takes their meat home they only have to investigate one animal not several.

Absolutely loved the video. I don’t know what’s happened where I live but 3/4 of the cuts we use to get at our grocers aren’t sold anymore. Don’t know where those cuts went or why, they just don’t sell them. Sure is a lot of lousy ground beef though. Watching this, I’m really going to explore the cost of going in with friends/family on a side of beef. Thank you for getting permission for this video and showing us how it’s processed and package. We live outside Waco, so Zephyr is a trek, but your prices are reasonable. I will keep watching and ranching.
