Exactly! The right person won & yes the 1st. 1 looked the best. & I find nothing wrong with putting a cherry on top. Giselle's cake was a fruit sponge.

I love that Giselle accent is prominent but sis, you know you made a 'light fruit cake or fruit sponge'. Reanette and Nadine's cake looked like what a traditional black cake should look like but I've never had it with nuts in it before. Reanette process with the water is accurate for baking it but clearly the right taste won. Congrats to Nadine.

Everyone has a preference. When my mom soaks fruits at the beginning of the year, she has one glass jar with raw peanuts ground in and one without.

I put Almonds in my cake. Nothing wrong with the walnuts either. The nuts add a bit of texture.

I would love to see a documentary about the origins of Caribbean black cake. I feel like the roots are in European fruit cakes like Irish whiskey cake and regular Christmas cake, but I feel like there’s more fruit, it’s more moist, it soaks longer, there is more dark rum and molasses. I’m sort of flip flopping back and forth between European and Caribbean recipes trying to make up my mind how I want to attempt to make my idea of a perfect fruit cake

I'm Filipino American from NYC and travel around the world for work consistently. Grew up around a lot of Trinis in Queens and it's my favorite cuisine in the world. Whenever I am abroad eating at popular restaurants and having the local specialities, I always think "damn, if there was a roti and doubles shop here, they would humiliate this food and people would question their food standards after eating it". I'm sad Trini food doesn't get the global respect it deserves.

That's fine. Money isn't everything and some gatekeeping is necessary. They've already gentrified ox tail to the the point where it's extremely expensive when it was previously considered food only the "poor" ate.

At first i assumed this would be one of those toxic trying food vdoes where people intentionally bash other people’s food and talk trash abt them. Or giving others low scores to win by themselves. Growing up I never understood why my chocolate birthday cake never tasted like other chocolate cakes. I was 10 when I found out It wasnt chocolate cake. It was Black cake all along. No alcohol though. In Cape verd its called "bolo escuro"

@@buzzfeedUK to cook, either jollof Rice or "Ragù a la Bolognese", because they are both super easy but very delicious. Really nice was the Ghormeh sabzi, but I ordered that at an Iranian food place I found after the episode. *Chefs kiss*

My Grandma puts half a bottle of rum, port wine, falernum AND Sherry. Then she soaks the cakes as soon as they come out of the oven with the same mixture 😂. It’s delicious

@@NylasWorld I think because Fiji is also part of the British colonies and black cake derives from English Christmas fruitcake; so it would make sense that Fiji has its own version as well. I went to a Nigerian/Ghanaian wedding once and they had their own traditional black wedding cake as well. I was so surprised.

Visually Ranette’s cake looks like a black cake you get a restaurants extra black. Giselle’s looks like a softer bun cake. Nadine’s very close to what most people make at home.

@@adaenechi6723 Good point. Generally when we speak of anything associated with the country we say Trinbagonian. The dessert was cooked by Trinis and the dish is locally known in T&T and the Caribbean.

Top tip, Fruits can be soaked the night before...cut em up, mix your liquors, bring to a boil add fruit, let them soak overnight...done!!

Giselle might have had a delicious tasting cake but that definitely wasn't a traditional trini fruit cake, so I'm relieved she didn't win.

This was fun to watch. I think Ranette's cake looked the best in what black cake should look like. Have clue about the taste, but i sure this was going to come down to Ranette or Nadine(congrats!). I actually appreciate Giselle bringing her version of black cake because it's a courageous move knowing others would immediate say it isn't black cake, In her defense... there are some Trinidadian people make black cake like this and still call it black cake because they still go through the process of soaking the fruit for a long time, but they may not use or as much of the alcohol normally used to soak the fruit and then soak the cake. I know this personally because my mother does this because she doesn't like all the alcohol. One of the other criteria for mastering the art of black cake is the ability to make it in those Christmas cookie tins.
