草莓慕斯乳酪蛋糕 Strawberry Mousse Cheesecake
這個食譜教你如何製作草莓慕斯乳酪蛋糕。

This recipe teaches you how to make Strawberry Mousse Cheesecake.
Here are the ingredients and steps:
材料 Ingredients
餅乾底 Cookie Crust
100g 消化餅 Digestive Biscuit
30g 溶化的奶油 Melted Butter
草莓果醬糊 Strawberry Purée
250g 草莓 Strawberry
10g 檸檬汁 Lemon Juice
35g 細砂糖 Granulated Sugar
草莓乳酪蛋糕 Strawberry Cheesecake
200g 奶油乳酪 Cream Cheese
50g 無糖乳酪 Non-sugar Yogurt
30g 細砂糖 Granulated Sugar
30g 牛奶 Milk
5g 吉利丁粉 Gelatin Powder
200g 鮮奶油 Heavy Cream
10g 細砂糖 Granulated Sugar
150g 草莓果醬糊 Strawberry Puree
草莓果凍 Strawberry Jelly
100g 草莓果醬糊 Strawberry Puree
20g 水 Water
1.5g 吉利丁粉 Gelatin Powder
步驟:
a. 餅乾底
1. 將消化餅放入密實袋,用擀麵棍碾壓弄碎。
2. 加入溶化的奶油,用手搓至均勻。
3. 圍好慕絲圈,在裡面平均分配餅乾底,再用擀麵棍壓實。放入冰箱冷藏備用。
b. 草莓果醬糊
1. 把草莓切成小顆粒,倒入鍋中。
2. 加入檸檬汁和細砂糖,用小火慢將草莓煮至沸騰並排出水份,關火,用攪拌器/壓泥器將它製成無明顯顆粒的草莓果醬糊。
3. 用保鮮紙封好後待涼備用。
c. 草莓乳酪蛋糕
1. 用橡膠刮刀切拌奶油乳酪使其軟化。
2. 加入無糖乳酪、細砂糖,攪拌均勻。
3. 在另一容器中注入牛奶,加入吉利丁粉,並放上一碗熱水上攪拌座溶。然後倒入奶油乳酪麵糊中,攪拌均勻。
4. 又在另一料理盤中加入鮮奶油和糖,用電動打蛋器打至發泡,再倒入奶油乳酪麵糊中,攪拌均勻。
5. 最後加入草莓果醬糊,攪拌均勻。
6. 用份量以外的草莓切成薄片狀,然後貼在慕絲圈的內側圍邊。
7. 注入草莓乳酪麵糊,放入冰箱冷藏30-60分鐘。
d. 草莓果凍
1. 將吉利丁加入水中,然後隔著一碗熱水攪拌座溶。
2. 將吉利丁水加入草莓果醬糊中,攪拌均勻。
3. 最後取出草莓乳酪蛋糕,淋上草莓果凍糊,再放入冰箱冷藏4小時以上便完成了~🍓
Steps:
a. Cookie Crust
1. Put the digestive biscuit in a zipper bag and crush it with a rolling pin.
2. Add the melted butter and rub it with your hands until it is even.
3. Prepare a round mousse ring and evenly distribute the cookie crust inside. Then compact it with the bottom of a rolling pin. Keep in the refrigerator for later use.
b. Strawberry Puree
1. Cut the strawberries into small pieces and pour them into a pot.
2. Add lemon juice and sugar, slowly boil the strawberries over low heat until they boil, then turn off the heat. Use a blender/mudder to make a smooth strawberry puree.
3. Seal it with plastic wrap and let it cool for later use.
c. Strawberry Mousse Cheesecake
1. Use a spatula to soften the cream cheese.
2. Add non sugar yogurt and granulated sugar, mix well.
3. Pour milk into another container and add gelatin powder. Put it in a bowl of hot water to help it dissolves. Then pour it into the cream cheese mixture, mix well.
4. Add heavy cream and 10g sugar to another bowl and beat it with an electric whisk until foaming. Then pour it into the cream cheese batter and mix well.
5. Finally add the strawberry puree and mix well.
6. Cut out some thin slices of strawberry, and stick them on the inner edge of the mousse ring.
7. Pour the strawberry cheese batter and put it in the refrigerator for 30-60 minutes.
d. Strawberry Jelly
1. Add gelatine to the water, then stir to dissolve it in a bowl of hot water.
2. Add gelatine water to strawberry jam paste and mix well.
3. Take out the strawberry cheesecake and pour it on top. Finally put it in the refrigerator for more than 4 hours to complete it~🍓

底托直徑大約是6.5cm。側邊的叫做「蛋糕圍邊條」:約寬6x72cm(長度可自己剪短調整)😄
