Minecraft is a very detailed, complex game with complex crafting recipes, impressive architectural aspects with nearly no limits, and a great survival mode. Parcour is also impressive and there are over 13 quadrillion (13 000 000 000 000) blocks in your average world, not including player-placed blocks. It appears that you've also forgotten creative mode, in which you can create impressive buildings using the aforementioned architectural complexity. The graphics may be simple, but there is much more to it than meets the eye, especially to a non-player. Finally, mods, modpacks and texture packs add a whole new dimension. You can have extremely detailed graphics, or dinosaurs and other planets. Minecraft is NOT a simple game.

All of the parkour, survival, and architecture you mentioned was not made by the game itself, but the players who took something simple and made it complex. When i was a kid, i wanted to create a mod that when you beat the Ender Dragon, the world would change. After you come back to the normal world, after the sunset, a second moon would appear, a purple one. This moon makes an eclipse with the normal moon, creating a scarlet aura around it, and the sky turns purple too. Slowly. I called this process the Ender Night. And this is the perfect theme for It. Edit: Well, as much as I would love to make this mod true, I don't have any programming skills or Java at all. So if someone wants to make this, go for it.

More concepts for ender night: Ender night is a guarantee first day of beating the ender dragon. Then the chances of ender night happening go down more and more. During ender night, the ground is tinted purple and endermen spawn more frequently. Ender pearls can also reach farther and are more common. Just thought that would be an interesting thing, making the player have to occasionally deal with more endermen then usual after defeating the ender dragon.

These songs from this wonderful man always seem to tell a story. This song to me is the start of one of them. I personally think that it starts with someone in a forest (you can imagine this because of the bird like sounds) and comes out on the other side to see a wasteland. They can't stand living anymore. So they walk forward and fall down the cliff and fall... They wake up in some Kind of void with four white squares on their right. There's a key on the ground. They pick it up and a keyhole is shown. They put the key in and open the door. That's the beginning of their story of minecraft. (Edit: I do apologise if that was a bit dark and serious. I will keep this to a minimum if you don't like it)
