The alligator is from Crawfish enterprises in Eunice Louisiana and you can order Captain Coby’s Cajun seasoning online at Captaincobys.com or you can take a road trip enjoy some good Cajun food and music! You won’t be disappointed! Infact the Boudin festival is this weekend in Scott Louisiana and that is always a good time!!!

I see I. Your pic you have two small cans of tomato sauce and then a big can. Are you using all three cans of this? If I’m using farm raised alligator meat should I still fry it down like you did the legs and also use mustard

Etouffe has more of a cream base or a light Roux base to it! Where sauce Piquante is more of a tomato base with roux! And Courtbouillion is strictly tomato base! They are very similar but prepared differently! Hope that helps! Thanks for watching! Keep cooking and I’ll see you in the kitchen
