I grew up in S Louisiana. There is a festival every weekend in a small town nearby. But Cochon de Lait Was my 2nd favorite only to Breaux Bridge's Crawfish Festival. I do miss my culture and my people.

Im originally from Cottonport which is only 10 minutes away. I miss going to the festivals and Mardi Gras now that I live in the Pacific Northwest.

We do exactly same thing in Crete Greece But with lamb and all we add to it it’s sea salt and that’s it nothing else It takes 4 hours but 1000000% worth it

This is the way to eat whole pig. That cracklin skin is phenominally flavorful. It's hard to chew sometimes but it's delicious.

Fresh pork, properly prepared and eaten as soon as cooked, unreal. Congrats to the festival on its years of making Louisiana what it is. Been a while, but we played the festival a number of years ago. Randy T. & the Rascals.

Randall Trantham Sorry, but it's against God's LAWS to eat pigs! God's LAWS are still in force and will be until the end of time! No matter what some false prophet (prophet=preacher) may have told you, JESUS plainly stated..."Think NOT that I came to destroy the LAW or the prophets. I came not to destroy but to fulfill. For verily I say unto you, till heaven and earth pass, one jot or one tittle shall in any wise pass from the LAW till all be fulfilled." Matthew 5:17,18 "SIN is transgression of the LAW." I John 3:4 Pigs are filthy animals and were never intended for human consumption, any more than were vultures or rats. Some animals are the garbage men of the animal world and have been declared unfit for the human table! We are never taught God's LAWS in church because the preachers only preach what they were told to preach in seminary, and if they dare to open their mouth and speak the truth, they will be kicked out of their organization tout suite! God made His LAWS for our protection and health, and when we defy them, we receive the curses they ultimately bring...like heart attacks and strokes from eating pork! Great series, thanks for sharing. As a life long Florida resident I get the best of both worlds. American Southern BBQ, and the Caribbean styles. Cuba and Jamaica both have delicious whole hog traditions.

That's how you do it; no sauce. Folks looked at me as if I offended them when I told them to hold the sauce and Cole slaw in the Carolinas. I want to taste the pork, not dried up meat masked in sauce. Much respect to this style of cooking.

I'm from North Carolina around the Charlotte area I was in Louisiana for 3 weeks and so many towns and places and people I was shocked to see that people have no sense of color down there everybody treats everybody with equal respect I was astonished to see it so deep in the South being from the south myself these are wonderful people

I was in Louisana in 01/02 & I loved it! The people were nice & friendly, & always greeted you with respect! I'm not saying that racism doesn't exist down there, as a black person, I'm well aware that racism isn't always the "in your face" kind. However, I was warmly greeted by both blacks & whites there, I hope it's still the same way because I'd like to visit again someday.

My Nan a Fenland farmers wife use to say "The only part of a pig you can't eat is the 'Oink.' In England we've been eating happy hogs for 1000s of years and they've found the bones in stone age settlements to prove it. I'm glad to see the old Wessex Saddle Back in this process, but the finest eating piggy is the Gloucester Old Spot in my humble opinion. This Cajun hog roast looks delicious. If push came to shove as much as I love my roast beef and cow products if I could only eat one animal for the rest of my life it would be the piggy. It's so versatile, from many fine roasting joints to spare ribs, bacon smoked or not, the best sausages, black/blood pudding, white pudding, Haslett, Brawn, pickled trotters, gammon and fine hams of all descriptions. Crispy pork crackling and scratchings. Kidneys and liver. All hail the Porker! ❤🐷❤🐖😊

In Texas our bbq is mostly beef, went to Tennessee stopped at a bbq restaurant all pork. Not going to mention which is better to avoid any hurt feelings .

We're in northern Canada and this kind of BBQ is something we don't get up here much,until now. I just built myself an enclosed pig roaster now I need lots of videos like this to teach me how to do it right. Thanks for sharing youe videos and dispencing this knoledge. We never learned this in chef schoole or during my apprentice time.

in puerto Rico we traditionally roast a suckling pig (lechón)for Christmas on a spit. Delicious stuff! Similar traditions...
