I stand behind these recipes. I bought the book for Maira's work and of course I do love cake. Am I a cake baker? Well now I am having baked two of these recipes. The coconut cake is in the oven right now. I was skeptical whipping butter and coconut milk at first ,then saw the fluffy results and am over the moon. I also made the chocolate cake but put it in a bundt pan instead of rounds. It too is perfection. In Maira's book Principles of Uncertainty I made her honey cake at the back of the book, and now make it often.
