Cake with apricots or sour cherries. Simple and quick recipe with seasonal fruits
Ingredients and recipe:
Flour - 240-260 grams
Powdered or caster sugar - 240 grams
Butter - 120 grams
Eggs - 2 pieces
Sour cream - 200 grams
Vegetable oil - 2 tablespoons
Baking powder - 10 grams
Vanilla sugar - 10 grams
Grated peel from a lemon
Salt - 1/4 tsp
Apricots - 6 pieces
Semolina - 3 tablespoons
Cut the apricots in half, remove the pits and place the cut side on a plate with semolina.
Put the butter, sugar, eggs, salt, oil, vanilla sugar and grated lemon peel in a bowl.
Mix everything with a spoon or mixer until the sugar dissolves.
Add sifted flour with baking powder and cream. Mix quickly until the flour is incorporated and put the composition in a pan greased with butter and lined with flour.
Place the apricot halves in the tray.
Put the tray in the oven preheated to 160 degrees C for 30-35 minutes.
Do not open the oven for the first 20 minutes.
The cake is ready!
After it has cooled, sprinkle with powdered sugar and cut into pieces
