Apricot and cream cheese cake. Delicious and easy to make!
Ingredients:
For the cream cheese:
Cow's cheese (9% fat) - 350 g
Sugar - 80g
Butter - 60 g
Vanilla sugar - 8 (one packet)
Semolina - two tablespoons
Eggs - 2 pcs.
For the basic composition:
Eggs - 4 pcs.
Sugar - 160 g
Vanilla sugar - 8 g
Salt - ¼ teaspoon
Grated lemon peel - one tablespoon
Cream - 150 g
Vegetable oil - 120 ml
Flour - 340 g
Baking powder - 10 g
Apricots - 6 pcs.
Cut the apricots in half and remove the pits. Place the apricot halves, cut side down, on a plate sprinkled with 2-3 tablespoons of semolina, which will absorb the juice left by the apricots when baked.
We prepare a cream cheese:
In a bowl we put 350 g of cottage cheese (9% fat), 80 g of sugar, 60 g of butter at room temperature, 8 g of vanilla sugar (one package) and two tablespoons of semolina. Mix with a fork or a vertical mixer, then add two eggs. We homogenize the mixture with the vertical mixer or with a whisk. The result is a cream like thick cream. We put the cream aside.
We prepare the basic composition:
In a bowl, put 4 eggs, 160 g of sugar, 8 g of vanilla sugar, ¼ teaspoon of salt. Beat with the mixer or with a whisk for 4-5 minutes, until the sugar dissolves. Add a spoonful of grated lemon peel and 150 g of cream. We mix with the mixer or with a whisk. Add 120 ml of vegetable oil. We mix. Gradually add 340 g of flour and 10 g of baking powder. Homogenize with the mixer or with a whisk. I got a composition like a thick cream.
Spread the base composition in the pan (28 x 18 cm) lined with baking paper and greased with butter.
Spread the cottage cheese mixture evenly over the base mixture and level.
Place the apricots evenly in the tray and press gently with your finger.
Put the tray in the oven preheated to 180˚C for 45-50 minutes, depending on the oven. Do not open the oven for the first 20 minutes.
The cake is ready! It grew well and browned nicely! Leave to cool in the pan for an hour, then remove the cake from the pan and optionally sprinkle with powdered sugar.
Let the cake cool completely, then cut only as much as needed.
