What is Isomalt?
Isomalt is derived form the name Isomaltitol, which is a type of sugar substitute made from beet sugar. Isomalt is used by many chefs, sugar artists and confectioners over conventional sugar because when it comes to making showpieces, cake decorations, dessert garnishes and candy; it is an excellent choice. Compared to sugar, Isomalt is more resistant to humidity and crystallization. Therefore, decorative elements made with Isomalt lasts longer and has excellent structural integrity, compared to normal sugar.
