BTW, u don’t have to wait till the rice paper is soften before taking it out. In fact, it’ll be much easier to dunk it in so the water completely covers it, then take it out immediately, tap the tip of the rice paper against the plate’s edge to remove excess water, while the rice paper is firm that way u can still handle it. Place it on whatever surface you want then colouring etc the rice paper will soften in a few seconds. I’m Vietnamese and that how we use rice paper to wrap rice paper rolls without the edges all bunching up or sticking onto itself (unless that’s the look ur are going for!) 😇

Thanks for your video, i love how much explanation you give. Can you please tell me if the rice paper softens once on the cake, is this something you should add at the very last minute or does it stay dry and hold its shape. Im concerned about putting it on the cake the day before and it falling apart. Thank you x

Hi Janet, with the Vietnamese rice paper I used for this cake, once it has dried out and is hard it stays completely hard. I have also tested it in the fridge and it still remained hard, so it should be fine to add it the day before.

Thank you for this! I had to make some for the first time, and did it along with your video. Really easy to follow and they look great. Especially thankful for the oven tip as I have to put them on a cake in 8 hours and didn't do research before to find out how long they take to dry 🤦🏼 Next time though I will wear gloves as I've made blue and green ones and now my finger tips and nails look like they mouldy 🤣🤣

Thank you for this. I definitely want to give the technique a try! How far ahead can you make the sails? Do they store for a while in an air tight container or do they need to be used straight away? How long will they last on a cake? Do they go soft over time?

You can make well ahead of when you need them. Just keep in a cool dry room afterwards, no need to store in plastic box. They last for ages.

You can just spray the paper with water and rub it in. It will be much less wet and dry so much faster. It will also slow you to control the depth of color much better.

Hi Liz, I actually placed the sails in the fridge and they stayed completely solid and kept their shape, so yes that would be absolutely fine.

I actually kept some of the sails in the fridge to see if they were affected and they seemed to keep their shape and stayed hard, so I think it will be fine to add them into the fridge.

I did try royal icing which worked but you need to hold it in place a little longer until the royal icing has stuck. Alternatively you could add cocktail sticks into the center just by winding it up slightly as I did at the end. You can then push these into the cake to hold it. I hope this helps.

I made these last using the same ingredients other than the silicone mat. We used parchment and all the paper has stuck to the paper. The are solid/dry but left a rough texture and paper behind. Any tips?

You could prep (shape) them in plain water, then brush with dry gold edible luster dust, or spray with a wet edible gold spray. You can make that by mixing the gold luster dust with clear alcohol (vodka) or with lemon extract. You can color the whole piece gold, or paint just the edges of them gold.
