I found Calçots this year. Perhaps for the very first time in south Andalucia. I just bought a pack of like 30 of them. I didn't know you could eat them that way. So far I used it with fried eggs and even in a thai dish. I have a bbq in a couple of week. I will keep this idea in mind for sure.

I am Mexican and I grew up eating charred onions at barbecues (also called carne asadas). The onions we use are called sometimes called spring onions in stores and have a very mild flavor and a small bulbous end with the greens still attached. I wonder if the calçot eating tradition is related to this

I love that you show Spanish cooking. It's so hard to find Spain tapa bars or cafe in the US. I want Spain food, not food from people that just speak Spanish. Spain and Portugal restaurants are hard to find Stateside. Their countries must be pretty good this they don't leave. I love the chalk bill on the table. When I worked in France, I ate high and low. Most of the time the low was better then the high.

Chef James!!!! This was such an interesting video I have never heard of this dish but can fully understand the appeal. I LOVE spring onions/green onions the sauce looks glorious I can practically taste the deliciousness!!!! Oh and I can relate not having an outdoor area to cook too so there were some handy hints for someone like me!!!! We say scallions and spring onions in the UK but in the US we say green onions. Calcots are are a bit different.

That is an interesting episode. While the Portuguese don't eat green onions and you can only find them in Asian supermarkets, I didn't realise it's popular in Spain! The Romesco sauce looks good and almost salsa like. They look really good buddy and I miss having a gas stove kitchen 😃👍🏻

thank you buddy! Calcots are not as common in the rest of Spain mostly just Catalonia and they have a much stronger flavor then normal green onions, I have been using them with a lot of stir fry's and curry since I still have so many leftover! haha

Great recipe. As you mentioned you can use hazelnuts (avellanas) instead of almonds. I do prefer the hazelnuts. I wish I could find calçots near me. 😢

The actual sequence of going to eat a calçotada at a restaurant at lunchtime is: you get seated. They bring the romescu sauce with bread. You eat the romescu sauce with bread. Then they bring the calçots. You eat the romescu sauce with calçots. Then you order more calçots. You eat the romescu sauce with bread. You order more romescu sauce. You ran out. You are at an impass. They bring the calçots. They bring the romescu sauce. You eat the romescu sauce with calçots. Finally you give up on the calcots and the romescu sauce (the later is the most difficult, you may still want to eat some romescu sauce with bread). You eat grilled artichokes. You eat some grilled white sausage or (and) chorizo with beans. You eat some grilled ribs. You eat some grilled rabbit with alioli. You drink a significant amount of red wine. You eat catalan cream. You drink coffee. You get very sleepy (coffee is not going to help at this point). You do not even contemplate a snack at night. And certainly you do not contemplate having a calçotada for dinner. Ever.

in Poland we even take the green leaves. Chop it and we can put on bread with butter and salt eat or chop green leaves and put in cotton cheese salt and then spread on bread.. Poormans food back then. BUT even poormans food is a delicatesy

you will have to add more roasted red peppers, adjust the recipe and you could add some bread to help thicken the sauce if need be

Is this the authentic romesco sauce? All the romesco i see on uses tomato and with onions garlic which just looks like brava sauce.

This is a very very very old sauce... in fact this sauce is a live medieval remnant on how sauces were made back then. (Lots of nuts and garlic as a sauce base...). Hence, there are no new-world ingredients. (No tomato) The more traditional recipe will use Nyoras (Smoked dried peppers) instead of paprika , but they are not found everywhere, so Spanish Paprika is a common replacement. (Make sure is Spanish, or at least Smoked, not all paprikas are the same) Some places use a romescu hot variant as the hot half of patatas bravas sauce, with the mayonnaise. Is not the traditional way, but is also very good.
