Love how you explain how you cook Ariel. It’s a gift some people have explaining. You two both have it. It keeps it interesting and learns me a lot! Cooking my calzones for years now. Just about the same way. Mostly in my dutch oven by the way. That pepperoni looked very tasty!

You should do a video on cooking on the wood stove verses the oven.. make two of whatever & cook one on the wood stove & one in the oven to see how different they turn out!

Found your channel about a week ago. Decided to watch from the beginning chronologically, and this video made me so hungry that I’m using it as a tutorial RIGHT NOW. I went back to the beginning to see if I missed any videos. I did miss a few, so I'm watching them today. Eric, is there anything you can't do? You really amaze me with your knowledge of just about anything! Arial, I love all the things you bake and all the things you and Eric cook. It's so cool all the dishes you guys come up with together. I am so excited about the new Cabin and what you both are going to do with it. I also am looking forward to you getting a garden up and running. Anyway, much love to you both and to Bo and Bandit. It sounds like you are making popcorn on the wood stove. Love your cooking video's, plus all the rest of them.

You actually need something for the yeast to eat, so you definitely need the sugar or malt, the salt controls how fast the yeast works, more salt means a slower fermentation etc. I’m a qualified baker but have no experience of sour dough. We have a pizzeria in our hotel and use a traditional yeast pizza dough , really want to try a sourdough as we can charge a premium price for it. Absolutely love your cooking videos.

the longer the dough rests the better the gluten develops. the better the gluten is developed the smoother stronger, and more pliable the dough gets. Autolyse your flour for 15 minutes before adding rhe rest of the ingreedients will give a good jumpstart on gluten development. I only found this channel a few months ago (you just started the sawmill building) and I haven't missed a video since.

I've been watching your newer videos for several months now and it wasn't until recently that I decided to go back to the beginning to see where it all started. Some how I missed this video! But I am loving it! BTW I HAVE NEVER SEEN A MORE BEAUTIFUL WOOD BOWL! And in my youth I turned many bowls on a lathe! Thank you for sharing your recipes!

Pro tip: At my dads restaurant we put cheese in the crust where you made your braid. Basically after you fold it in half you put the cheese in the crust area, and then fold it over to kind of seal it. Cheese tends to leak out unless you’re an expert calzone master like my dad so don’t be surprised if that happens hahaha.

Love your channel. I make pizza dough all the time. I have found that the wetter dough always makes a better product Also all flour is different. From bag to bag. Some can be more absorbent You really can tell by feel whether it’s a good batch or not. Same with cinnamon buns.

Nice job you guys. Looked very tasty. My wife and I watched this while eating our home made pizza. The dough is a cold rize pizza dough which is so good for thin and bubbly crust. We'll have to try making calzone sometime.It's so great to see a couple of young people doing what you do.

Try stretching the dough with the back of your hands rather than rolling it out with a pin. That way you'll keep the air in the dough and it will puff up more. Also, I'm curious if you could mimic the baking oven affect by heating up two same sized skillets on the stove and then covering one with the other. Love your videos! Glad to have stumbled upon your channel :)

Try cooking one inside the stove, in your Dutch oven or on the skillet, just like a wood fired pizza oven

Looks yummy. But you said it's a quick dinner. If it takes 30 minutes after assembly to cook and flip for each calzone, it's about an hour before you can eat them together. I assume, you just eat yours when it's hot and then Ariel gets to eat hers. I like your recipes for your pesto and sauce and the combo for the centers. Certainly it is healthier to consume what you've grown yourself. Bon Apetit!

Looks like an amazing panini, in my opinion, which seems better to me thant a calzone ! thanks for that recipe, I am looking for more recipes on a skillet or dutch oven, I hate the electricity consumption of my oven ;)

It is important not to use iodized salt with sourdough starter, just an FYI( for those who read the comments like me, lol) . Always use kosher, sea, or Himalayan when working with sourdough starter.

@J Carver oh god no lol I cant do spicy food even if it's got a spicy smell to it I can't do it.even taco seasoning burns my tongue sometimes and I dont use hot seasoning lol.but I've never heard of spicy banana chips.i learned something new today

I would drill a hole and hang my rolling pin from the ceiling on a chain hook or wall nail. How about a pot hanger (when you can't build out, build up). Also, I have seen you use a Dutch oven...why not bake in that? They work well for baking as the lid contains the heat within.

Beautiful Calzone. Food is always better made on the wood stove.. and of course from scratch. I use to live in Ak-And it will always be forever in my heart.. (And my sourdough liked it better there in the cold temps too. ) Fun video.. Thanks for sharing.

I wonder if you could use a baking/pizza stone on the woodstove, and then put an upside down preheated dutch oven over top to be a little oven?

If you cover your pan the dough would probably rise more and have a lighter texture.

I adore that wooden bowl that I see in almost every kitchen video, it's so symbolic:)) Looks like you use it for some liquid stuff too, and I guess it is holding well? I believe you might be mistaken, I have an acacia addiction and it looks like acacia wood. I’m on day 10 of my sourdough starter and I’m definitely making calzones, these look amazing. Also, love your new wood floors. You guys did a great job on the stairs. I enjoy your channel.

Natasha Wiegand we actually just used salt and then dipped in warm vinegar prior to storing in olive oil, I will try to do a video on it ☺
