Cambodian Lemongrass Sour Soup with Spareribs: Somlaw Machu Kroeung

Somlor Machu Kroeung, Cambodian Lemongrass Sour Soup, is a flavorful and aromatic sour soup:
Ingredients:
1 1/2 pounds of pork spareribs
4-5 cups of water
1 1/2 tablespoons of tamarind ( or substitute with 1 tsp tamarind powder)
1-2 tablespoons of fish sauce
1/2 tablespoon of sugar
1/2 teaspoon msg (optional) or 1/2 tablespoon chicken bouillon
1-2 tablespoon of oil to sauté the garlic and lemongrass paste
3 cups of mixed vegetables (such as water spinach, eggplant, and jalapeños)
1 heaping tablespoon of prahok (fermented fish paste)
1/4 cup of Kroeung paste (lemongrass, galangal, kaffir lime leaves, red pepper, and garlic paste)
Fold in fresh holy basil (if you can get some)
Sliced red chili and fresh herbs for garnish (optional)
Instructions:
1. In a large pot, heat the oil over medium heat. Add the garlic and Kroeung paste and sauté for a few minutes until fragrant.
2. Add the ribs and cook on medium heat until dry. Add tamarind, prahok, fish sauce. Bring to a simmer and cook for about 10 minutes or until dry.
3. Add water and bring it to a boil for a couple of minutes.
4. Add the mixed vegetables and cook until they start to soften.
5. Season the soup with fish sauce, sugar, and tamarind powder to taste.
6. Serve the Somlor Machu Kroeung hot with rice and a side of sliced red chili fish sauce if desired.

Somlaw Machu greung is my favorite Cambodian Somlaw. When I do make it, I like to use beef tongue, beef and beef tripe. I do like it with catfish as well. Pork ribs is delicious. That's what I like about Somlaw Machu Greung, you can use any protein substitute.🤤😋👍🏽

Honestly, I’m not sure but maybe checkout any southeast asian supermarkets in your area. I used to live in Richmond and there was only one Laos market that sold holy basil. It’s out of season at the moment but i’ll have listed on my website when it’s in season again.
