Part 1: Ingredients and recipe for short noodles
( This recipe is for 4-6 serving)
- 2 cups rice flour
- 1 cup starch flour
- 2 1/2 cups Boil water
- Add one cup at a time
- 1/2 tsp salt
- 1 tbsp oil
Instruction
- Combine all the dry ingredients together and stir it with hand mixer.
- Add the cooking oil
- After you mix well, add 1 cup of freshly boiled water first. And after add the rest of the boil water water. (1 &1/2 cups)
- Use the something strong like wooden spoon to mix the ingredients together.
- Let it cool down before kneading the dough ( 7-10 minutes)
- After the dough is cool down, knead it to combine for about 2 minutes
Part 2: Ingredients and Recipe to make stir fried Short Noodles
- 1 tbsp oyster sauce
- 1 tbsp dark soy sauce
Instructions: These 2 ingredients are using to lightly flavor the noodles and give the noodle color
Part 3: Ingredients for the stir fried
- Short Noodles (the amount that made in the video)
- Garlic Chives (200g)
- Bean Sprouts ( as much you like )
- Garlic
- Cooking Oil
- Some Eggs
Part 4: Ingredients and Recipe for Asian sweet fish sauce
Ingredients
- 2 cups of water
- 1/3 cup of fish sauce
- 1 tbsp of salt
- 1 cup of sugar
- 1/4 cup white vinegar
- 1/4 cup of lime juice
- 6 cloves Garlic - peel and finely sliced
- 2 cloves shallots - finely sliced
- Red chilies 🌶 is optional and can put as much as you would like

you were right. they add too much preservative into their products, noodle, because they are keeping on the shelve not in the fridge.

Thank you for this recipe!! My sister and I loved getting lort cha when we were visiting relatives in Cambodia years ago, I’ve been trying to find the short pin noodles ever since. I can’t wait to try and make this!

The liquid rice dough you have can be used to make crepes..it is a dish called 'ghavan' in India.. these rice crepes taste good with coconut milk or sprinkle some paprika on top , roll it to eat

Lort Cha is one of the most favorite dishes! I ate Lort Cha while I was in Cambodia about 6 months ago, it was my last time!

Hi Ly, thanks for sharing your new method to make this short noodle. I've been making this for years by using potato ricer (the one you can change the size of the ring and I normally use to large one ). You just press your dough into the hot/boiling water ... and it would take only a few minutes to make them.

@@LifeWithLY , sorry for your confusion. It is a disk not a ring, but I said ring because it is round like a ring and I wrote without thinking because English is not my language, I'm Khmer. There are 3 sizes of disk where you can inserted into a tube to press the dough/ potato. it you add one teaspoon of xanthan gum into your dough , it will become long noodle. Khmer call "Noum Bangnchock " , when we eat with curry soup or prahok soup. Have a nice weekend with your family.

Hi there, that is so nice to live in Siem Reap city. It is a very fun city to live in. I’m not too sure where you can buy the Tapioca starch, but I think they would sell it at any market there. I have never made amok before but lok lack is also my favourite. One day I will make it. 😊 thank you so much for watching! ❤️

I made the noodle with the instruction from this vodeo. The noodle came out kind of fluffy, not chewy like restaurant made texture. Do I need to knee after combining two flour to have a chewy texture? Thanks.

To get chewy texture, you may need to add more tapioca starch. I like the texture not too chewy.

Can you make the noodles in advance and put them in the fridge overnight?

I have not tried it before. But I think if you save in the fridge uncooked once you’re done shaping them, it should be okay. But if you cooked it and store the texture may change.
