I suspect more than two holes are drilled in the vehicle as the gas locker is vented and the water and waste are underfloor so surely need holes for the pipes?

Yep. And the holes for the diesel heater.

where do you store the bedding sleeping bags pillows etc

We have an old Bilbo T4 and it has a massive deep boot space. Duvet and all the pillows etc. go in the back on the rear part of the bed which means we don't have to start moving it all when the bed comes down. All our outdoor gear goes in the boot underneath by the gas locker. LOADS of storage!

Just a small annoyance for me as in so many conversions is that the sink is not next to the worktop space for draining pots

I guess the thing to do is put a tray on the sliding table and use that for draining
