Tender and juicy scrumptious rack of lamb cooked over a campfire. Campfire food dream at its best!
Ingredients:
Rack of Lamb
1 Tbsp Crushed Garlic
1 Tbsp Salt
2 Tbsp Paprika Powder
2 Tbsp Cajun Seasoning
1 Tbsp Crushed Black Pepper
1 Tbsp Dried Rosemary Leaves
2 Tbsp Oil (for brushing)
For Sauce/Glazing:
1 Tbsp Honey
2 Tbsp Sriracha Sauce
2 Tbsp BBQ Sauce
Method:
In a small bowl mix salt, paprika powder, cajun seasoning, crushed black pepper, and dried rosemary leaves. Now take a rack of lamb and rub crushed garlic on all of it then rub the spice mix on all sides of the rack of lamb.
Prepare the campfire coals, place a grill on it and then place the rack of lamb on it, let it cook for 10 mins then flip over and cook for another 10mins, turn it once more and cook for another 5mins. Remove it from the grill.
Prepare the glaze, in a bowl, add honey, BBQ sauce, and sriracha sauce. Mix well. Now spread the foil paper and transfer the rack of lamb on it, glaze the rack with the glaze on all sides, wrap the sheets of foil paper and transfer it on the burning coals, let it cook for another 10-15 mins. Then place it on the grill and let it cook for 5 mins.
Now remove it and carefully remove the foil paper. Voila! You will see the steaming hot chops with an aromatic fragrance of herbs and spices coming out. Let it rest for 5 mins and enjoy with corn, bread, or as it is! :)
