Mickey, I was sure you were Swedish or Norwegian 😅 Thanks for the amazing videos! Over the past month and a half, I’ve ridden 5000 km on my bike across Thailand, mostly in the central region. Now I’m planning to head north. Here’s a recipe for perfectly cooked buckwheat/rice, inspired by my Filipino girlfriend: Ingredients: 1 cup of buckwheat 1.5 cups of water (or slightly less for a drier texture) 1/2 teaspoon of salt 1 tablespoon of butter (optional) Instructions: 1. Rinse the buckwheat: Thoroughly rinse the buckwheat under cold water until the water runs clear. 2. Start cooking: Place the buckwheat in a pot, add 1.5 cups of water, and season with salt. 3. Cook on high heat: Set the pot on high heat and cook uncovered. Wait until most of the water evaporates and the water level is just slightly below the top layer of the buckwheat. 4. Reduce the heat: Once the water level drops, reduce the heat to the lowest setting, cover the pot with a lid, and cook for another 5-7 minutes. 5. Let it rest: Turn off the heat, cover the pot with a towel (keeping the lid on), and let it rest for 10 minutes. This will allow the buckwheat to finish cooking and become perfectly fluffy. 6. Add butter (optional): Before serving, stir in a tablespoon of butter for added flavor. This method guarantees perfectly fluffy buckwheat every time!
