Three Dishes One Soup 三菜一汤 is a typical Asian family meal. I added a timer to keep track, watch how I panic-cooked this! I had to prep ingredients from scratch and cook in 60 mins. In the recipe you will see already prepared ingredients. This helps to make it easier to read and follow!
Nowadays everyone is extremely busy and often don’t have enough time to cook healthy and delicious family meals. So, I thought why not try this challenge on creating a homey meal for 3-4 in only 60 mins!
A 3 dishes 1 soup meal should always consist of protein (meat, seafood, eggs), vegetables and soup to balance up everything. During my childhood, this is what I had daily at home, with different combination of course. Cooking this certainly make me think of home and brings up a lot of memories!
INGREDIENTS:
1. Chicken Soup with Potato, Carrot and Tomato
600 gr chicken bones
180 gr boneless chicken meat, cubed
150 gr potato, medium chunks
150 gr carrots, small chunks
1 small dried squid (optional: or skip this)
1 spring onion, make a knot
1 slice of ginger
1 small tomato
2. Pan-fried Red Mullet with Turmeric and Lemongrass
400 gr cleaned Red Mullet
1 stalk of lemongrass, smashed and cut diagonally
2 cloves of garlic, smashed
3. Stuffed Mushroom with Minced Chicken in Sweet Soya Sauce
5 large brown button mushrooms
120 gr boneless chicken thigh, minced
White part of a spring onion, minced
4. Stir fried Cabbage with Dried Shrimp
5-6 leaves of Chinese cabbage
1 tbs of dried shrimps
3 cloves of garlic, sliced
1 medium shallot, minced
Green part of a spring onion, sliced diagonally
STEPS
1. Chicken Soup with Potato, Carrot and Tomato
- Cut chicken carcass into small pieces, then parboil in 1.5 litre of water for 7-8 mins
- Discard water, scrub and rinse bones until clean
- Remove skin and cartilage of dried squid then wash and scrub clean.
- Toast until entirely golden brown.
- Boil 1.2 litre of water, add bones, spring onion, ginger and 1.5 tsp salt
- Simmer for about 40 mins under low heat (optional: up to 90 mins if you have more time)
- Season chicken cubes with some salt and white pepper, set aside
- At 20 mins mark, add toasted dried squid
- At 30 mins mark, remove squid, ginger, spring onion and mushroom stems if used. (optional: or continue to simmer)
- 15 mins before eating, add potato, carrots and tomato
- 5 mins before eating, remove bones and add chicken cubes
- Skim excess fats and season (adjust to taste) with 1 tsp salt and 1 tsp sugar. Serve hot!
2. Pan-fried Red Mullet with Turmeric and Lemongrass
- Make diagonal cuts on both sides of the fish
- Sprinkle ¾ tsp salt, ½ tsp turmeric powder on both sides
- Massage the marinade into the fish
- Stuff lemongrass and garlic into the cuts and stomach to infuse more aroma.
- Let marinate for 30 mins before frying
- Remove aromatics and pat dry before cooking to avoid oil splattering
- In a small pan, heat up 4-5 tbs of oil under medium heat
- Add fish and aromatics and fry for 3-4 mins on each side
- Serve with aromatics at the bottom the plate (but don’t eat them) and fish on top!
3. Stuffed Mushrooms with Minced Chicken in Sweet Soya Sauce
- Remove stems (optional: wash and add them into soup. More flavours and no waste!)
- Use a teaspoon to scrape the gills out.
- Mix the gills with minced chicken and minced onion.
- Season with ¾ tsp salt and ground white pepper. Mix well then stuff the mushrooms.
- Add 1 tbs of oil in a pan under medium heat.
- Add mushroom meat side down, cook for 3-4 mins, then flip and cook for another 3-4 mins
- Add some water, 2 tbs soya sauce, 1 tbs sugar.
- Mix and allow to thicken. Sprinkle some white pepper and serve hot!
4. Stir fried Cabbage with Dried Shrimp
- Rinse and soak dried shrimps in 40ml of water for 30 mins
- Chop cabbage into medium pieces
- In a wok under medium high heat, add 2 tbs of oil
- Fry minced shallot, sliced garlic and soaked dried shrimps for 30 seconds
- Add liquid used for soaking the shrimps
- Add cabbage, season with ½ tbs oyster sauce, 1 tbs soya sauce
- Add a little more water if it’s too dry
- Cook for 2-3 mins and it’s done
- Garnish with green part of spring onion. Enjoy!
