Howdy from Texas. Dude! There are plenty of people here in the Southern United States who eat suckers often. They pickle them, can them, and more. Great video. But if I could suggest something. Olive oil is probably not the best oil to use for frying, it has a very low smoke point and can turn bitter if overly hot, which could make your food taste bitter. It would probably be best to use canola or something that has a higher smoke point. It would be a shame to ruin some perfectly good fish.

Scale, leave the skin on, filet and cut out any rib bones, and then score across the meat cutting down almost to the skin every 1/8th inch and deep fry in 350 degree oil (after breading the filets) some of the best eating fish you have ever eaten and the Y bones cook up and there you have super good eating sucker filets that are bone free! It is an Ozark southeast Missouri tradition to go sucker gigging every fall/winter. We use gigs(like 3 and 4 pronged spears) with 14' gig poles gigging in ultra clear water in rivers from jet boats with ultra bright baseball stadium LED lights. Its a blast, and we fry them right on the gravel bar

When I was a kid we all went.sucker grabbing in the boy river in Minnesota just out of Leech Lake and we would literally reach in to the spawning fish and slip our fingers in their mouth and flip them up on the bank then we took them and smoked them in a smoke house on big baking sheets. I always loved to eat them hot out of the smoke house they were juicy and delicious! But most people eat it cold like the white fish we netted. That was back in the 70's though. Still sucker is great.

Hey man, I was wondering. You eat a lot of trout, what do you do about the pin bones? Do you eat them too? I caught my first trout ever a couple of weeks ago and filleted it myself, but I couldn't get all of the pin bones out an it made me not want to eat it.
@connorhamilton80384 жыл бұрын
A very good technique for cooking sucker is First scale the fish just on the fillets though Second take the ribs out Third cut the meat vertically 3/4 of the way through the fillet Fourth use a tooth pick or what ever you can find to hold fillets in place ( fold fillet into donut shape but do not over lap like a cinnamon bun) Take oil and get its really hot ( enough to be able to fully submerge the fillet) I like to use Canola or vegetable with Fish Crisp ( but don't think you have fish Crisp in the states) Put a really powdery breading on DONT EGG WASH (thin layer) Then fry to perfection THE BONES SHOULD DISSOLVE FROM THE HEAT
