Exactly, people don’t seem to realise that you can’t make something like a cleaver cut just as easily as a scalpel or surgical blade, because they’re made for different purposes and certain choices to give up a little bit of one desirable attribute, to get more of a different desirable attribute were made to make them better at their purpose. It’s about as logical as seeing if you can make a screw driver as good at sinking nails as a hammer. They’re both used for the same kind of task (joining two pieces of wood together), but if you make a screwdriver able to do the same thing as a hammer, then it’s not gonna be much use as a screwdriver anymore.

surgical blades are not what people think they are. They are not that sharp so that they dont accidently cut organs or other body parts. they are perfectly balanced for easy maneuver. .

Interesting fact, surgical knifes have sharpness requirements. If its too sharp the operator wouldn't feel what they're cutting hense giving them control.

Fun fact, 11 surgical blades are used for laparoscopic incision. The sharpest part of the knife is actually the tip to make “stab incisions”.

As a butcher who has trained under several OGs, learning a wet stone and steel will save you HUNDREDS on knives. Angle and pressure are everything. Can turn a butter knive into a razor blade.

You're using that tester wrong. Dropping the blade damages it. Apply gradual pressure.

I'm curious if they will show how they tension the wire, or what they do to make sure the tests are consistent. If you lossen the wire, it takes more force. How you cut the wire affects the score too. And the accuracy of the scale matters too. I'm sure it is a good sharpener, but I suspect some trickery here.

That is a number 11 blade, which is sharp at the tip cause because it's only really used for puncturing the skin. Use a 10, 15, or 20 blade next time, which are cutting blades

@ulto6000 There are quite a lot of different blades, and we use them for quite a variety of tasks. 10, 11, and 15 are our most common ones that people may typically see in a surgery or on a movie. In the case of this video, he would want to use a 10 or 20 as they tend to resemble something more akin to a kitchen knife and has its sharpest point on the side rather than the tip like an 11 blade.

The difference between a sharp and thicc blade(kitchen knife) and a sharp but thin blade(surgical knife) is that a surgical blade will cut very easily because essentially it is splitting not cutting, a kitchen knife cuts instead of splitting, a kitchen knife is made to last while a surgical blade is made to be only used once or twice

The thinness is certainly a factor...But the steels composition has everything to do with the ability to achieve that fine edge . Most steels will fragment and leave a rough edge long before getting to scalpel sharpness

You’re using the tester wrong. You’re supposed to slowly apply pressure downwards with the knife. Applying sudden pressure will give you a false reading.

Fun fact Surgical scalpels are intentionally not as sharp as they could be. They made one so sharp that you need an electron microscope to see the edge. but surgeons that tried using that said they were afraid to use it because they couldn't feel how deep they were cutting. They have scalpels sharpened to a standard sharpness so that surgeons don't have to guess how much force to apply. their scalpels will be consistent and so they can perform surgeries more efficiently.

You can make almost any knife that sharp with such a narrow bevel. That is almost the right angle for straight razors but a kitchen knife needs to be 20-25 degrees

The only knife that needs a broad angle like that is hunting knifes most kitchen knives are actually between 15-20 even american brands are 20 most Japanese steel blades are 18

Ia n I sharpen hunting g and pocket knives everyday in my store at 30 degrees for the simple fact of hunting and pocket knives take a beating. So with a thicker bevel the edge stays longer

Knife maker and professional sharpener here; more acute bevels have higher edge retention (until edge stability is compromised from to low of an angle, this depends on the steel used.) Many kitchen knives, even western, will be fine with a 16-17 degrees per side. Putting 20, 25, or 30 degree angles on kitchen knives is going to significantly reduce edge retention (but increase edge stability, reducing chipping/rolling.) 25 degrees is fine for a cleaver, not for a chefs knife. As for you comment of straight razors; they are usually measured by inclusive angle, not per side. So if a straight razor is 15° (inclusive) it is 7.5° per side. Not comparable to a chefs knife at 15° per side, which would be 30°inclusive.

If I remember correctly, the reason, or at least one of the reasons scalpels aren't extremely sharp, is because if it's too sharp, it's harder for the body to heal the incisions.

That’s not how that works… the force applied from the weight of the knife is equal to the force applied from his arm when using both to try cut the string. If that was how it worked, this test would be pointless.

@@ybisask yes equal. For the knife or any other blade to cut the string and equal force is applied. If both blades cut at 100, both blades had an equal force applied to the string. It doesn't matter if you have a giant sword or a tiny surgery knife, if the number matches, both forces are the same.

Knives forged from Damascus steel have a particularly high hardness, which often leads to the question of how best to resharpen such hard blades. Tumbler has a high-efficiency diamond wheel. This material is harder than Damascus and as a result, even such exquisite knives can be sharpened with Tumbler. Also, the constant angle of 15 or 20 degrees ensures that only the cutting edge is resharpened and the expensive blade is not damaged.

It won't work well on single bevel knives. It will ruin the geometry. Stick with whetstones.

The blade you're using is called a #11 scalpel, and is only used for puncturing holes for laproscopic procedures, try with either a #10 blade, or if you can find one, they also make and use, on very rare occasions, an obsidian blade

You are supposed to go slow on the test. The slower the more accurate. Going fast cheats the system because kinetic energy helps snap the string.

You can make anything sharper than it, the main thing is retaining the edge for more than a second. For example, if you cut it right you can have a 2x4 be sharper than a razer but after one cut it’ll be dull again

No, they use the shaprness tester wrong so that the scalpel looks way duller than it actually is. A scalpel would be under 50 if it was properly tested.

Never seen that sharpness tester before and thought the higher the number the better. When I saw 900s I thought "holy shit that blade can slice through time!"

Obsidian is used sometimes in surgery, but I’m not sure if the level of sharpness can be replicated by any other material

Fun fact, the thinner a blade is the sharper it is. Back during the Stone Age the cave men would make their blades thinner than a mm (millimeter) and they would cut perfectly to thick animal skin.

Speed of the chop can effect rating. U can see he slowly pushes the scalpel but quickly does the knife giving the illusion that it is sharper

Scalpels are not made to be as sharp as possible, there made to be consistent among every Scalpel . So doctors get used to the sharpness and don't accidently cut too much or too little

sometimes the scalpels come blunt or poorly sharpened from the factory, mainly due to the sterilization process

You can sharpen pretty much everything hard very sharp with any sharpening equipment. Having the knive stay sharp is a good vs a bad knive.
