Mexican tips. For the chiles before soaking them, pass them over some heat either on your skillet or on gas stove. *Same with the tomatoes* the longer you soak the chilies the smoother the salsa. Use the water you soaked them in to blend it

And baba ghanoush 🍆 And this is by no means traditional, but I'll do this meal and make an herbaceous chimichurri-like sauce to go with it. Cilantro, mint and parsley all go in the blender with both raw and roasted garlic, serrano chili, champagne vinegar, lime and garlic infused olive oil that was used to roast/fry the garlic. The juxtaposition of its' brightness to the lamb's more earthy flavor...well it makes my mouth water lol. You've made me so hungry now!

@@dodette Sounds so good. Yes baba ghanoush is a tasty side dish. There use to be Mediterranean restaurant close to my job that I loved. Unfortunately the owner had to close down bc the rent was to expensive, sadly another Mexican restaurant took their place. Cities have become over saturated with mexican restaurants. Mediterranean and Lebanese is a yummy healthy cuisine.

I will share you a secret on how to make it taste good. First you take you liver and cut it into strips and put garlic paste and salt on it. Then you fry it in an extremely hot cast iron pan until it gets a nice color, but not too long, just a couple of minutes. Overcooking makes the texture awful. Then you remove it from the pan and then you fry your onions, you can deglaze the pan with soy sauce. When the onions are golden brown and delicious you put the liver back and just combine them. It tastes amazing and tender. Really good.

@@BatmanPwnage the smell of it cooking is a wee bit off for me too. I can definitely eat it, the best way the taste is hidden to me is Döner I had in Germany, where it's mixed with other meats. I'm gonna try the lemon trick some people were saying to get rid of the gamey musty taste. It also makes me feel not great after I eat it? I'm not sure if it's just because it's not a meat I eat often or what, but it makes my stomach hurt.

I just didn't like the lamb flavor, you can like very nicely and slow cooked meat of any kind but dislike lamb. Lamb has a pretty distinct flavor so I get she dislikes it. Cilantro is interesting, for me; I'm pretty sure that I have the "soap gene", because I can identify the "soapy" flavour - but I love cilantro regardless. I can't stand lamb, though - for the same reason(tasting like a barn smells). I'm not picky though, and am a chef myself. I've tried so many times, but only enjoyed it twice(because those two times, it didn't have it's signature gamey taste).
