Just a suggestion. Before sharpening the knife test it's current sharpness, then use the tool. That way it shows how well the tool does with "maintenance" THEN break out the cinder block to show how it handles a pure dull knife

@gesarts3625 knows what he's doing?! Very fun to watch BUT... He's right when he says people who sharpen knives for a living are cringing.... the way he pushes down every time he uses a knife sharpener that is not a whetstone is insane. You're supposed to pretty much let the weight of the blade do the work....very little if any extra downward force is necessary. It still may eventually do the job... but ruin the sharpener much quicker and take a lot of surface off the blade each time.. probably taking much longer to then make fine adjustments to finish off strong.

Hey, one of the people who sharpens knives for a living, with a pull through sharpener such as this one, you don't want to put too much pressure down as you're pulling it through, you want just enough pressure that the blade doesn't bounce around, which would give you uneven edge quality, listening to it, it sounds like you may be putting a bit too much pressure down on the knife, hope that helps!

These types of sharpeners usually do create a decently keen edge, but they remove a ton of material (those metal shavings) and they also create a ton of stress in the apex. The edge they create will usually go dull very fast and also be prone to chipping. The people that use these sharpeners usually don't have strops, which makes the knife go dull even faster since these "sharpeners" usually leave a nasty burr that folds over instantly. While they can work in a pinch, your edge will only last for a few. Using the sharpener repeatedly will cut the life expectancy of your knife down to a tenth of what proper whetstone sharpening will do. Also, double edged razors are rated from 25-50 BESS. Utility razors are anywhere from 150-200.

The degree amount on the sharpener should match the degrees already in the blade. If you want to make the degree amount on the sharpener lower than on the blade, you will have to run the blade through many, many, many, more times than you would otherwise.

This is not for anyone buying Japanese knives. Japanese knives are made of harder steel and sharpened to finer angles than western knives. 9-12 degrees is ideal for Japanese knives. Also the steel is so hard that ceramic isn't good for sharpening. It will wear down fast creating an unusable sharpener. Diamond, CBN, or thick natural stones which you can resurface is ideal. They hold an edge pretty well too, so once your sharp you can go a year or even 2 without sharpening again.

its just a piece of leather glued to a piece of wood that pulls the burr from the edge of the knife after you sharpen it. If you look closely at the sharpener the one sharpening side is slightly infront of the other side, so one side is sharpened first and the other a moment after. So you will likely have a burr to one side that its best to remove with a strop or it could effect your result. Take a popsicle stick or a piece of plastic or something and rub it on the concrete sidewalk outside in one direction a couple of times and then feel the side of the stick you didnt touch to the sidewalk and you will feel a lot of material has been pushed to the back side and is creating a lump. or in the case of the stick a splinter hazard probably.
