I mean that's the whole point of those brand. Selling hundreds of thousand pack of the exact same tasting coffee. If you really think about it, it's closer to what Coca-Cola is selling than what a vinyard is selling (when coffee is actually just water + a plant) The easiest way to have the beans always tasting the same is to over roast them. That's why for almost everyone coffee is synonym with bitter, because that's what they mass produce.

It’s one of the reasons I stick around, even if I know some of the basics it’s a whole different level of knowledge when an experienced professional is talking in layman’s terms to an amateur. What I see in a causal lesson on video can’t be taught on paper and Alex understands this perfectly.

I think that makes it easier to understand the technique for the viewers and how they shape a dish, rather than recipes themselves. Most of the Foodtube is about recipes, not techniques - which is what makes Alex special. I'm not going to even attempt making mozzarella or dry pasta from scratch like he did, but there are tidbits to pick up on improving dishes I already make. His dry pasta, ramen and cacio e pepe and carbonara series have loads of such great info.

I almost feel shortchanged to be honest. Was there no chemistry between these two? Because the collab felt fleeting, almost superficial - like a city break. Forget the fucking eclair, make James stay for longer. Wine and dine him. Show him the underbelly of Paris. He will inevitably fall in love with a French girl, propose, get rejected and contemplate jumping into the Seine. Console him with gourmet foods, drinks and prostitutes. Fine, give him an eclair if you must. But definitely film it all, edit it, make an epic out of it. Take a magnifier to food, to coffee, to life. We want the myriad details and flavors. No more quickies, depth please...

They may have been impressed but at the end of the day doesn't mean they wanna change the way they make it. The version Alex made is suited to his specific taste, but they are running a commercial bakery, so they need something that would work for a majority of people

@@Zraknul They don't know the coffee though. It's specialty of course but that only makes it more complicated. They can of course speculate it was James' own coffee and then pick a medium or medium dark roast. He doesn't have that many varieties. Then they just need to learn to brew properly with an aeropress though James does share his technique. But it's a lot of work especially if they aren't into specialty coffee already and I bet they aren't based on the coffee they chose. It was probably almost as expensive as specialty but very low grade and too dark a roast to dinstinguish the flavours in the bean, though presumably those wouldn't have been very good.

Wait.... am I to understand that your impression of coffee drinkers is such that they are more particular about the quality of their cup than tea drinkers?? From the midwest, most american-drank cups of coffee are out of a dripper that would make *okay* coffee if it had been cleaned sometime in the last 10 years or if the beans were even remotely fresh. I have felt like the "standard cup of folgers" is vastly subpar to even a "standard cup of hot water over a lipton teabag" which could be appropriately described as "nothing more than warm leaf juice." Basically what I'm trying to say, a poorly made tea will almost always be more palatable than an average american made cup of joe. I love great coffee, but most of the folks here just want something hot with caffeine in the morning and they'll drink swill to get it. Tea on the other hand.... I understand that if your subpar pour is late for the Queen's tea time, MI6 will make you disappear. Tom Scott has a whole video about it, and the whole island has their own clocks set for tea

He basically started and made famous coffee KZbin, and created a space for other KZbinrs to strive, pick their niches and share their knowledge. This was honestly fun to watch. I just love seeing Alex's surprised and excited expressions when he actually tasted the different flavours that coffee has. Reminded me so much of myself when I first started learning about all the different coffee flavours. When I served my brother and father some of the coffee I made from my Mocha pot, I got the same kind of surprised and excited response. They have always thought that coffee just taste bitter. Don't we all do at first. But when we learn how to properly extract coffee it just literally opens up the coffee flavors so much more. Even the crappy coffee beans taste different when you extract it differently.

I wanted more from the pastry chefs. Their reaction showed way more than what they verbally said. I couldn't tell if they were impressed or they thought it was bad and didn't want to be rude?

this guy has to be a walking encyclopedia for all things food. It's the knowledge of experience during the learning process is what really taught me. I am a experiential learner, this speakers alot to me
