James' Waffle Rice Burger: (yields 5 Burgers)
RICE:
4 cups (uncooked) of short grain sushi rice
3/4 cup of furikake
1 tsp of corn starch
sprinkle of MSG
Cook rice in rice cooker, mix cooked rice with furikake, MSG, and corn starch
Using gloves divide rice into 4.5- 4.75 ounce balls (this should net you about 10) set aside.
Using a waffle maker, spray non stick spray on the insides and waffle the rice balls (on high) until they are light brown ( this should take about 2-3 mins per patty)
Burger Patties:
2 pds of ground beef 80/20
1/2 tsp of grated ginger
1 whole shallot finely minced
1 tbsp of garlic powder
1/2 tsp of black pepper
1 tbsp of worcestershire
1.5 tsp of grated green apple
1.5 tbsp of soy sauce
1 tbsp of sugar
pinch of MSG
1 egg yolk
1 tbsp of Mirin
5 slices of american cheese
combine all ingredients and divide into 5 oz balls. (make sure to slap the mixed meat as you are forming to get rid of any air bubbles trapped inside the balls o meat) set aside
Cook burgers to your liking using a cast iron pan and a burger press. ( ideally you want to make these smash burgers.) top with american cheeses
Burger sauce:
1 cup of kewpie mayo (has to be kewpie mayo)
1/2 tsp of malt vinegar
1/2 tsp of wasabi
1.2 tsp of sugar
1/4 tsp of sesame oil
pinch of pepper
2 tbsp of Bulldog Brand Tonkatsu sauce (also has to be this brand)
Mix and set aside
Toppings:
5 fried eggs (runny yolk)
1 beefsteak tomato sliced semi think
5 pieces of iceberg lettuce
1/2 of a english cucumber sliced thin
Assembly:
rice patty
burger sauce
hamburger patty ( cheese facing down on the sauce)
cucumber slices
fried egg
tomato
lettuce
rice patty
