Appreciate your vids. I've been pretty much watching everything you put out. I did one batch from a starter tea from Amazon. I was very happy with it. The next batch was kind of meh (from my previous batch). About two weeks in and still tasted like tangy sweet tea and not strong. I bought some unflavored kombucha from store and waited until it was room temp. I added what I could do my batch. The sobi did look better but taste was not that much better. I bottled and it didn't carbonate much. Is it wrong to add anything after it was already fermenting? I'm not sure if different strains don't play well with each other.

If a new batch of kombucha takes 5 to 10 days, how do you know when it is just right for flavoring/bottling?...is it how thick the new brew scoby is or just a time and temperature science perfection? I just made my first batch got 10 sixteen ounce GT bottles 24 hours ago sweetened with 100 ml of strawberry/kiwi 100% juice, will put in the fridge tonight and see how it tastes tomorrow. I brewed it for 7 days.

I think it's an Assam tea, which is nice, strong and tasty. It's what I use for my kombucha-making.
