This was a nice video. I brew beer a lot at home and keg condition my beers. I will now be using some of the setup to second ferment the kombucha. Kegland now do 8 and 4 litre bottles that act as a small keg which may be more in reach of people and using a Sodastream bottle to carbonate the smaller volumes in a more portable way that can sit in most large domestic fridges.

The stainless steel ball lock post on the gas side looked loose when you attached the quick-connect fitting. You should tighten the post if it is loose. A worm gear clamp on the hose at the fluid side fitting could save you from a mess too. I love kegging kombucha for it's consistency and especially the speed with a carbonation stone lid. But I have had my fair share of messy mistakes with Cornelius kegs. Love your videos!

Can you do this but with the c02. Just use the natural fermentation co2. Would the keg explode from too much pressure kinda like what happens to glass bottles when i dont burp

Keg wouldn’t explode because there’s a pressure relieve valve that open up when pressure is over 130PSI

with the Calamansi have you checked what the pH goes to after adding? it might through off the ferment if it drops too low, maybe as an idea?

I remember reading somewhere that fermentations can get stuck if the PH is too low. I want to say the fix was baking soda but this was for higher alcohol yield beverages. Might work for this. But it could also be the antimicrobial anti fungal properties. You may also need to get your scoby to build up a resistance like with the part green tea part black tea hack for a Jun Scoby.

i've heard of using nitro for kombucha, but not CO2. have you tried the fine bubble luxury of nitrogen on kombucha?

I'll add my congrats, as well. I was suspicious... Anyway, we like variety too much to go the kegging route. I have an iSi Gourmet Whip for carbonating small amounts of stubborn 'buch. Works pretty good.

Did the co2 make the kombucha taste different than natural process for yours? I used a tabletop/portable baby kegger version w a co2 cartridge a couple times and the taste wasn’t appetizing. I used immediately tho. Maybe that was the difference?

We use a keg to make moonshine. SCOBY in the mash is a thing. Get you some paint buckets at the Home Depot.

Check to see if your kalamansi juice has preservatives…may be inhibiting F2. If not, the citric acid may be acting as an inhibitor. Anyway, awesome solution!

So I've bought a bottle of store kombucha. Put it in a small vessel with sweet tea and let it sit for about a month or so. Then I moved it to a much bigger vessel with sweet tea. So I've got my first kombucha batch made just recently. The fun part is - though the process worked, the mushroom never formed.
