Back in 1880's, Espresso Machines at that time makes 2 bar pressure eapresso. That's less than the pressure of Aeropress with a good technique to put pressure in Aeropress. I assume she meant "Machine" as Electric Espresso Machine. You can actually make a great Espresso with a high pressure handpress like a Flair Espresso maker. Most of baristas don't know how to make a great coffee using a non-electric coffee maker as they rely most of the time on Espresso Machine that is electric

That’s right! You can produce espresso with a Flair! And it’s also true that most baristas don’t know how to make it with a non-electric machine because there are more factors involved, such as water temperature and the pressure that should be applied - those would rely solely on the barista skillset!

I disagree. I think there's too much rigidity in the definition of SCAA or the Italian Institute for Espresso and Coffee. Espresso really is defined not by the consensus of the Baristas but such institutes that is completely arbitrary. I think different bar of pressure is required for different grind sizes, if a Moka Pot like Bialetti Brikka requires only 2 Bar to extract a balanced cup of espresso in 1:4 ratio (Italian parameter). If in case you want to extract very finely ground coffee then the pressure required would be far higher and the yield would be richer. Crema with coffee in a ratio of 1:4 or 1:2 is an acceptable definition for me.

Listen here lady, italian here and the moka coffee is the OG espresso, throw out your 500€ espresso machine or open a bar, yes it's slightly better with the machine, but a good moka makes wonder. An espresso machine is like taking a ferrari for a short city trip, instead of a normal car, it looks cool, but you go the same speed, you take a ferrari when you have a race to win, like owing a bar with a lot of customers

I believe the experience and result you get from a machine vs a moka pot is very different. I see espresso as a craft or challenge due to all the dynamics and complexities to achieve certain results. But moka pot is more of the essence of coffee making, a remembrance of family moments, evoking so many emotions, mainly nostalgia. It’s even so hard for me to compare them both! Not true. If you watch my content you’ll realize I advocate for great coffee for anyone, and I believe everyone should be able to enjoy great coffee at home without breaking the bank. Espresso is just one way of making coffee, and to get it right you need the proper tools and machine, but most importantly, fresh beans and skills. Moka pot or other “espresso” makers are cheap, and delicious, but the result is not the same as what you get with a machine. And that’s fine! I personally enjoy mokapot and pour overs more than espresso, because of the beans I use and like to buy for day to day. Also, you can kick off your espresso bar with less than a thousand dollars if you want to learn and enjoy espresso 🫶

Italians have always called their Moka pot coffee "espresso" and they always will, just so people don't think they need to correct them for using the word. It's their cultural tradition. I think it's because the Moka uses the same amount of pressure as the espresso machines in the bars used in 1933 when the Moka was invented. Of course, it's not the same; but to me it's just as good in espresso-based drinks.

While espresso is usually brewed at around 9 bars there are espresso equipment out there that do it around 2.7 bars like the Nespresso machines or moka pots. It's nowhere near the same though and it's a completely different brewing process. Moka pots, single boilers, heat exchanger and dual boiler machines will completely brew the coffee differently.

I have good espresso but I can still advocate for my moka pot. Using proper techniques you can get a better concentrate. Keep in mind though that an espresso machine relies on force for extraction. A moka pot is not made for pressure. However, finer grind, using a filter, packing it evenly, you'll get a good extraction. In my opinion I've had many espressos but my moka pot still makes a stronger cup. But a lot of things could be the cause of this
@lizhappybeans
@lizhappybeans 7 ай бұрын
I enjoy both methods greatly! I’d have to say that what makes an espresso “espresso” is not necessarily how strong it is. If this method works for you, amazing! But I would advise against packing fine grinds with a filter inside a moka pot, as it can be extremely dangerous. I’ve seen them literally explode.

Depends on what you have nearby! A good idea is to go to your favorite coffee shop/roastery and ask them to grind the beans for you - specifying you are brewing espresso shots! This is because when you buy commercial-grade "espresso" ground coffee, it is usually ground for moka pot, which can actually be too coarse for the desired density and thickness of espresso.

Wait how did people make espressos before there were machines then?
@lizhappybeans
@lizhappybeans 7 ай бұрын
Great question! They didn’t 😜. Espresso as we know it was invented in the early 1900’s when Luigi Bezzera improved existing coffee machines so they could make the coffee faster, resulting in a stronger result that we now call espresso (probably because of “express”). And around 30 years later, Alfonso Bialetti develops the “Moka Express” which is known as moka pot or stove top, which provides a strong concentrated coffee relatively fast, but that’s not necessarily considered “espresso”.

Staresso can certainly produce espresso because you're creating the necessary pressure with the hand pump! The results, however, may lean towards the watery/thin side - but I have to admit I haven't experimented with the Staresso. I recently made a full review on the Outin Nano (portable espresso machine), although that one has a heating element and you don't have to manually pump, the concept is similar.

Im cursed sir as I am a poor fella with a weathy persons taste. Ive cringed at american drip coffee since i took a sip as a toddler. At the age of 8 I tried a true mocha latte...at one of those book stores that disappeared in the 90s I went home and had my dad make me a coffee and add chocolate syrup and hot milk...and spat it out. At 8 YEARS OF AGE I realize i loves espresso and what could be done with it. Id order mochas and lattes when my family went out to eat, and again starting at 8 years old, I would ask if they made it with espresso or coffee, and then scold them that its not a latte if they use coffee. I could walk into any reaturant, bookstore, coffeeshop or market and instantly recognize the smell of espresso. Even when it wasnt being made at that moment, places hold the heavenly musk. The struggle was real as a pre-adolescent coffee snob, and then later food snob in Buffalo Ny during the early 90s. Tim Hortons, Dunkin Donuts, and othe local coffee stores made nothing but drip coffee up until the last few years. Places that did have it came and went thanks to the uncultured ways of the Buffalonian. In a preinternet era, and being a powerless youth, I had to hope that Id discover a espresso place while tagging along with my mom on errands, which as you could imagine didnt happen often. I digress from my story of woe and ask only that if you ever decide to give away or get rid of one of your magical machines that express that carmel colored gold from the loam of the heavens. Please. Consider me. One who will enjoy it. Thoroughly.

If you are so adamant that you cannot make espresso without an "espresso machine" then why are there two types? One uses pressure and the other uses steam. And the steam espresso makers are not cheap either. After spending my hard earned money on an "espresso maker" I tried for several days to pull a half-decent shot. They all tasted like burned, muddy coffee. The only decent shot I ever had was when I was in Milan, Italy and they used a very steampunk looking brass monstrosity that was 4 feet tall. And nothing I've drunk back in the States tasted anywhere nearly like that, even if the machine cost $1,500. And puhleaze, the fancy little doohickeys like that scalp massager and those metal discs do not make much difference. They taste a teensy bit better but if my tongue was just a smidgen of a percentage point number, I wouldn't notice the difference anyway!

@@christoskarakostas2656 I feel your pain! 😩😫😣😢 I've experienced the frustration of trying to use the Bialetti Moka pot from bad instructions in videos by KZbin influencers, who don't know the traditional way to do it, so they invented fake hacks to compensate for their poor technique. (My first Moka came without the paper Bialetti instructions, so I tried to learn from videos.) Finally I found the "Annalisa J Moka pot" video and was able to master my two stainless steel Venus pots (I have the 2 cup and the 4 cup). The traditional Italian way since 1933 is very, very simple and makes consistently good coffee every time. It follows Bialetti instructions to the letter. So if you follow this traditional way, you'll get good results from your Moka every time. This "Liz Happy beans" channel also has good videos about how to use the Moka - she's a great barista! - but I think beginners need a little bit more detailed instructions, so try the "Annalisa J" video - it's 14 minutes long. After that, you can step up to the Brikka; but the Bialetti instructions for Brikka are different and must be followed to the letter for best results. For Moka: 1) Coffee - Always use medium-fine grind. I emailed Bialetti and they said "the official correct grind for the Moka is medium-fine." 😂 Most espressos are too fine for the Moka, but the ground espressos sold in Italian grocery stores are ground coarser to work in both the Moka and the home espresso machines: illy, Lavazza, Kimbo, and Bialetti Perfetto Moka Classico are top sellers. Overfill the coffee basket loosely, then use your finger or spoon handle to level it off with the rim, and remove all coffee from the rim. Don't press it, tamp it, or bang it down on the counter. The coffee must be loose to let the water flow through. 2) Water - Bialetti says to use cold water and fill it to touch the bottom of the pressure valve. "Annalisa J" recommends room temperature water, so I use my room temperature bottled water. My daughter is a former Starbucks manager with the advanced "Coffee Master" training that Starbucks used to offer as an elective, and she uses the chilled filtered water that comes out of her refrigerator door in her Brikka. (I'm still mad at James Hoffman because his unnecessary and overly complicated hacks, like starting with hot water plus more, made my learning process a nightmare and made the Moka coffee worse, not better. I think he owes Italy an apology! I've emailed him about this, and he didn't reply. 🤣 But ALL Italians know he's wrong about everything he said about the Moka! Hot water doesn't allow enough time for the coffee to bloom or for the gasses to build the right kind of pressure, and it can damage the valve. It can also scald your hand when screwing the pot together. Maybe Hoffman is correct about other things, but he admitted he doesn't understand the Moka, and he even said, "It broke me!" 🙄) 3) Heat - Use a low gas flame or a medium electric stove. (If necessary, drop the electric stove down a notch below medium. But try medium electric first.) By cooking it low and slow you won't burn the coffee and it has time brew correctly. Watch the pot like a hawk and listen. As soon as you hear it gurgle, immediately shut off the gas or remove the pot from the electric stove and set it on a pad to finish filling. A pad will retain the heat better than setting it on a hard countertop. (The gurgle means the boiler is almost empty, like when you slurp the last of your drink through a straw.) The heat inside the pot will finish filling it off the heat. Then use a teaspoon to stir the first most-concentrated coffee up from the bottom, and pour. The key is to know when to remove the heat. But once you get it, it's always very simple after that and you'll get consistently good coffee every time. Different for Brikka: 1) You can't fill it with water to touch the bottom of the valve or it'll overflow, so Bialetti gives you a measuring cup. Use 120ml for the 2 cup Brikka, and 170ml for the 4 cup. 2) It's brewed maybe a little hotter and faster than the Moka. So you can go higher than a low gas flame, like set the flame on medium but then turn it down so all the fire is under the perimeter of the pot. For an electric stove, medium heat is right - but if your stove is powerful, you can try it a notch lower. 3) The key is knowing when to immediately remove the Brikka from the heat. Both my daughter and son-in-law are former Starbucks managers, and they say to listen for the ripping or tearing sound. I can't hear that because I don't have a trained ear, so I follow Bialetti's advice to remove it as soon as it starts steaming and loudly gurgling because the stream is well-established. The heat from inside the pot will finish filling it off the heat. If you leave it in too long it'll scorch. It takes making a few pots for the valve to break in and make lots of crema. I use a timer and I get the best results with it takes about 6 minutes. The crema starts really coming in at around 5 minutes. Anyway, you have to make a few batches to discard while seasoning the pot so you can use those to practice. Any bad reviews are from people who didn't follow Bialetti instructions. The most common mistake is filling Brikka to the bottom of the valve instead of using the enclosed measuring cup. Only clean the pots with warm water, never soap or anything else. Occasionally cook a batch of plain water in the pot to deep clean it. Stained spots can be rubbed with a paste of baking soda and water. I hope that helps 😜
