Fall is in the air, a brief but spectacular season in Alaska, filled with vivid colors, frost and wildlife. We preserve mushrooms and make Toum for this winter and enjoy a campfire meal with our freshly harvested food.
~ Toum Recipe ~
1 cup diced garlic
3 cups grapeseed oil
1/2 cup lemon juice (2 large lemons)
2 tsp kosher salt

These mushrooms that you collect are also present in my Poland. Sarcodon imbricatus, commonly known as shingles hedgehog or scaly hedgehog. Its other name is scaly cone, it is a rare mushroom and subject to partial protection in Poland. The pine cone belongs to the same family of boletus mushrooms as the boletus. Scaly cones grow from August to October. They can be found in deciduous, coniferous and mixed forests, more often in the south Polish in foothill forests. It is a mycorrhizal fungus, associated with beech, fir or spruce. Cones most often grow singly.

My dad used to cook grouse for me when I was young! I haven't had it since then! I wish I knew someone who hunted them and could cook them for me! Awesome!

Road chickens are honestly harder to cook without drying them out than to hunt them. Go buy a used 20ga shotgun and walk dirt/gravel roads early in the morning. They are about as dumb as they are tasty. Not a very sporting bird (though they can be occasionally), more of a harvest than a hunt.

The kabobs looked delicious. Have you ever wrapped the grouse with bacon? I used to with grouse and pheasant gives it moisture and of course , flavor. Another interesting and informative video on mushrooms and the processing. Goes without saying the photography of the wildlife is outstanding. Blessings to you both. 😊🇺🇲

Marinated grouse breast wrapped in bacon and grilled is hard to beat! Super good in the crockpot w/cream of mushroom soup as well! Good luck with the rest of your fall protein gathering!👍🏻

I'm glad to see you cutting the mushrooms rather then pulling them out of the ground. By cutting the stems the mushrooms will resprout . Ethical harvesting,well done.

Thanks so much for introducing us to Toum! We were inspired by your garlic harvest last year and planted some of the same varieties you mentioned. They did pretty well considering how wet the summer was! And now we have "garlic crack" tucked away for the winter! After making it this morning I fully understood why you were so joyful when you sampled it!!

Great video guys! If y’all enjoy soups, then try making a big pot of salmon bones and mushroom soup. Add leeks, garlic and whatever peppers you like and you’ll have a bunch of soup for the winter 😅

I couldn't help but giggle at y'all when it was raining and there stood the hut. 🤣 You have to admit that was a little funny. I always find grouse so interesting during the summer months. They look a lot like chickens, but happen to be dark meat like duck. Never tried grouse that I can recall, but I think I'd really like it since I like duck meat.

Love the lead in. The signs of fall and winter are on you. Lot of salmon. People don't believe me when I tell them how thick they are. Good fiddle music. Good hunting. tasty eats. Great looking meal. Interesting canning the mushrooms. Happy hunting. seems like a really good place for the spruce grouse. Our season for ruffed grouse doesn't start til Thanksgiving. Too hot then, it's crazy. Another canning recipe you might try sometime with mushrooms is pickling them ☺️ I was doubtful about pickled mushrooms before moving to France but they’re so good and very nice for snacks or with the French apero 😊 autumn hasn’t started here but I think we’re all looking forward to the heat breaking into cooler days. From rosehips you can do preserve ( is a long process),mushrooms with onions,roasted peppers and tomatoes very good for winter.Great video, God bless you guys, have a wonderful weekend.
