Great video! I’m going to try canning wild blueberries (bilberries) with different sugar levels in the syrup/brine, and also just water. Will be a fun experiment, as we prefer it natural if possible for many things. As I haven’t canned blueberries yet I can only guess what happened. But I think that was completely normal. The skin on a blueberry is so thin and when the berry boils it cracks. Try boiling a blueberry in a pot on the stove and see what happens. I think it would be very hard to can blueberries and keep them whole. Perhaps your located on high altitude, if so I stand corrected, but NCHFP states that if process time is 10min or more there is no need to pre-sterilize. So your 15 min should be well within. Unless your at >1000ft. ;) Thumbs up and you’ve got a new follower!

I just watched another video on canning blackberries and their ratio was 1 cup sugar to 4 cups water. The blackberries retained their shape so I am wondering if using less sugar would keep the blueberries from dissolving in the syrup when canned.

I believe you can use frozen blueberries but each fruit has a different ph level so you’ll want to find a recipe specific to each fruit you’re using when canning to know it’s safe.

That's how they can up. Just like when I make pie filling. There are small pieces and larger pieces in the sauce. But it makes excellent crisps, topping on pancakes, on ice cream. I'm planning on making pie fillings this winter with all my fruits I grew this year. Plus jams. Going to can strawberry rhubarb pie filling. I also got 3 fat ziplock gallon bags and a fat quart zip bag of rhubarb in the freezer. And that was picked about 3 weeks ago and it is ready to pick again. So I think the leftover rhubarb I'll make juice and can that. Happy canning everyone!

I just did the hot pack and I was shocked at the point where one is dissolving the sugar with heat and I lost half my berries. Soooo I then decided to make jam as I’ve already tried preserving peaches which turned into a whole lotta syrup with peach chunks 😂 So I figured jam it is then and added more sugar and took it to the gelling point. I was watching your video specifically for the results as I too want a recipe to preserve the whole berry. Do you have any updates on your search?

Put you canned blueberries in the water. Bring to a boil. Remove the jars from the water. They will bing. Your 15-mins at a rolling boil actually cooked your blueberries.

Any liquid that is hot will ping the jars, I do it often with broth before putting it in the fridge. I’m game for select “rebel” canning methods but I wouldn’t personally be comfortable putting them on the shelf without the correct cooking time to kill off the nasties.
