I like things less sweet as well. Not only so I wipe the rim, but I wipe it with vinegar on a small bit of the paper towel. Vinegar has an antibacterial element to it and it will take care of any microscopic transfer that might happen in filling of the jars as well as clean the rim

You can , I just use the back of a spoon and trail my finger to see if it’s thick enough , if it leaves a gap where my finger went it’s thick enough - hope that makes sense
