**Please Note: After it had vented 10 minutes, at around 14 minutes in the video, I put the ten pound weight AKA jiggler on the canner. In the video I set my timer then. I should have waited until the gauge hit ten pounds or the jiggler made a sound clearly so I could be 100% sure that it was on 10 pound pressure. ***

I'm thankful it encouraged you! Read your stove instruction book as some stoves cycle the heat and that's not good for canning and some stoves only have one eye approved for canning. This I have learned from my viewers.

Hi. I started canning beans when commercial beans started going up in price and were mostly water. I would can enough for a year in each of our favorite varieties. Because I didn't have a container of beans culturing mold in the back of the fridge, my husband and I began eating beans more often, and reducing meat in soups, chili, and casseroles. The benefits of eating like this are pretty obvious. However, the response from the YT chorus has been mixed 😮. Works at my house. Nice show. Worth a sub.

I can dry beans, too. You showed the difference in the bean consistency between 1” and 1/2” headspace. I’ve noticed my bean texture being different between jars when I can beans. The amount of headspace may be the reason. Thanks you for mentioning that.

I've done both pre-soaked and dry, and you're right. Delicate beans like cannelinis just turn to mush when canned the pre-soak way. 💚

Mary, I just wanted to say that if you've never had home canned foods, you'll find that they are so much better than store bought ! I used to help my grandmother can all of her garden foods and they were so good! Wish I'd kept it up, but was too busy for a lot of years. Now I'm watching Mrs. Joan and others and thinking of trying it by myself. We never canned any kind of dry beans or peas, but I think I may try them first. Mrs. Joan makes them look so easy. It would be wonderful to be able to just open and heat them and not have to cook them very long.

We eat them as side dishes, just season and warm. The black beans are great in Chicken Tortilla Soup, Taco Soup, etc. I make white bean chicken chili with the navy beans, and chili with pintos too. All recipes on my channel.

Hello I'm from Canada. I love that south accent. Sounds like you might be Dolly Partons neighbor. That is definitely the simplest way to can beans and firm beans are so much better. But there is some controversy over weather that method has been scientificly tested. But if your Mama did it that way and you all were safe all those years i guess thats proof enough. Cheers.

I've been doing beans this year. After I put the beans in I'll put in some better than bullion, salt n seasonings, and some onion, peppers, meat, or whatever I like for that particular bean. Then top up with the water like shown. It's been wonderful having full flavored beans ready to eat right off the shelf!

I got a Carey electric canner last year, I really love it, does the job, turns itself off when it’s finished. Set it at night before bed, next morning jars are cool ready to go into the pantry, same thing in the morning, set it and forget it, come home from work and it’s cool and the jars are ready to put away.

Are you using a flat top stove? One of my followers did and when she read her instruction book her stove recommended only 1 of the eyes for canning and she was using the wrong one.

@@ushagorringe3250Yours probably came with a 15 pound weight so if you needed 10 pounds pressure it would not rock. They sell them like that so it covers all altitudes. To me it's better to buy 10 pound separately. Mine beaks away and covers 5, 10, 15 lbs. The 15 works but you have to watch your dial guage much more closely. I hope this makes sense.

You are great! Thank you so much for being detailed in each step. I have had my canner for 2 years too afraid to try till I saw your video. Getting nervous it's been boiling 45 min some steam but button is still down, not much steam. Hopefully get better soon😮

@@ushagorringe3250 Is your stove on a high heat? Then adjust heat lower once 10 pound pressure is on. Let me know how yours turn out.

Thanks a million for answering! I stayed by the stove, scared! Wt kept going up ,so I tapped on regulator to let some steam out since it never rocked like yours! Jars look good except some look like the water from jar came out? I put all new lids and hand tightened too! I probably need to use them soon. Thanks for checking on me!

I have canned beans various ways and they all seem to soak up most of the liquid over time, my dry beans done this way were great for a while but then soaked up the water - I did a bit less head space on those as well. This last batch I did the "right" way but have only been on the shelf a couple of weeks, am keeping an eye on the fluid level in those just to see but the beans thus far look like they held together well but the true test is when I use them LOL.

@@renaesutton3145 I understand. We've got to be a scientist/chemist it feels like. But whether they soak up some juice or not they are 100 times better than bought cans. Us canners will keep on trying.

I can beans the same way but I learned something from you. My jars do leak out liquid when canning and now I know I have been tightening the rings to tight. Thank you for the lesson ❤.

@@AtHomewithMrsJoan My jars are pinging now, but I did notice that one of my jars has liquid at the top and the black eyed peas are separated from the liquid clustered together… Some of my beans are floating in a few of my other jars. I debubbled. What could I have done better? I want to do another batch tomorrow.

@@Flowergrl69 If jars are cool, now shake them softly to see if water moves in with your beans. If sealed tight, they are fine. Before canning if you notice a few beans floating in water you can dip them out, it's just an older bean. Not a problem if left in. Let me know how second batch does.

I like to soak my beans with 2-3 fresh water rinses to rid them of gas producing enzymes (oligosaccharides). That’s my problem with buying canned beans😅. Very gassy for me. Then I think I will pressure can them the cold method you do, in pints so they don’t have to cook so long as quarts. Hope I don’t get a mushy product like the usual prescribed method you mentioned.
