Great video! One tip... Tighten your lids much more snug...you will not have the sealing troubles. You will find that you can crank the lids down pretty tight before you get a bulged lid. An hour or two in the cold hickory/apple smoker before you jar your fish...is ridiculously good!!!

I like that idea to smoke the whole fish first, I was recently introduced to smoked whitefish from Costco and love it. They have a lot of bones like trout but much better flavor and looking forward to trying your idea. I had thought I would use Alder but I don't think the fish I had was smoked with that and I thought hickory would've been strong. Do you brine yours before you smoke it? We have canned hundreds of cases of yellowfin and Albacore and swordfish with pepperoncinis added and garlic in the half pint sized jars. Everyone seems to love it. Thanks for your advice

Whitefish are my favorite fish! Will have to try canning them sometime. As an alternative to Mayo, try Greek Yogurt or Tzatziki. I use it for tuna sandwiches all the time.

No need to remove the small bones, the canning process breaks them down and realistically you don't even notice them

I have canned sucker 's and trout before. I usually make croquettes with them . believe it or not , it's better than the commercially canned salmon in my humble opinion. The pressure basically disingrat all the small pin bones .

I have heard that about suckers, may have to try it. My wife makes great "crab/whitefish" cakes with it,... I prefer home canned over commercial any day

You might not believe this , but it's true , you can look it up , I live in Virginia , more specifically, in Scott County. We have a very unique thing here , we have a fish shooting season. If you've never fished with a .375 H&H mag , well you've never fished ! lol . Although I always used a 30-06 . Whatever you use , you have to have a roundnosed FMJ , and they have to be on a hard bottom , not mud or sand . They are hard to find now , but I still have a stash of Hornady 220 gr FMJ's. They stopped making them in the late 80's . I've heard that the game keepers in certain African countries pay big bucks for them , as they were their go to for culling Hippos. From mid April till mid May we can legally shoot rough fish in the Clinch river. Now I'm up in years and my health has left town , but I used to do this . The main target everyone wanted was the Redhorse sucker which can reach 8 to 10 pounds. I only went after the yellow sucker, which is about a 2 - 3 pound fish . But taste wise , they cannot be beat . Using my canning method and then making 'fish cakes ' , I changed everyone's mind to this . Yes it's crazy to crawl up 20 feet into a tree to shoot fish , but until you've done it , you just wouldn't understand.

Its really quite mild tasting like a say Pike or Walleye... its really good eaten fresh, and canned I would say its a little less fishy than canned Tuna. Because they are so abundant up north they are a great fish to harvest

Tailmpa fish you should have deal vinegar dried hot pepper black pepper red pepper and a teaspoon of wine with white vinegar liquid lots of herbs in it and I usually put garlic in my face then I put Canada tilapia

All the info I have ever seen says pressure canning is mandatory, not sure how they used to do it but I wouldn't take any chances when it comes to this....it is really good stuff

I think if you boiled the lids to soften up the rubber you might get all the jars to seal. Why did you de-bone the fish, if you added a bit of vinegar with the salt the bones would be soft enough to eat. I put a Thai chili in every jar for a stronger kick.

You need racks it you are going to stack….might be why some jars didn’t seal…..too much weight on them to properly vent the jars

I hate disposable lids. What a waist of money. I use them more than once. I open the used jars so gently as I can and use these the lids (ore flats) again. (2x). It works.
