Hello from Colorado. I have been canning for decades and one of my favourite things to can is NM Green Chile. Covid has taken a toll on the Grn Chile market in New Mexico, so they will be harder to get, and definitely more money. After living in NM for years then moving I found the one thing I really missed were the green chiles. What we have been doing for years is buying the frozen Hatch green chiles in the freezer section of Walmart (3 lb bags of chopped, varying heat levels but we get hot), thawing them then pressure canning in half pints IAW the NM State University guidelines (30 min and the pressure for your elevation & raw/cold pack). 6 lbs makes 13 half pints and we get 1 half pint of juice that we also can to be used in other dishes. We have even fooled our visiting NM friends when they can't believe that they were once frozen. I subscribed to your channel so maybe you might visit my newbie channel. Take care and stay safe. Howdy i canned fresh roasted hatch chili and dehydrated the frozen hatch. I also canned 25 half pints of juice from the frozen. I hav 12 half gallon jars with about 18# ea of dehydrated hatch from walmart. I been canning about 6mo but hav gone crazy doin it. Did 155pints of bacon pieces given to me last wk. Was busy!!!!! Ck out alaska prepper too. Does alot of canning!!!!😸😸😸😸💞💞💞💞

Thank you for sharing this video. I'm canning up the frozen green chili in my freezer to make some room and I appreciate your info. I actually decided to go with smaller jars - the half pints, after watching this. They would work better for us and we would have less waste. Thank you dear and hope you are doing well. Last summer, when I stocked up on jars, I am new to canning, and got mostly quart size jars thinking I would use them the most for soups, stews etc, but now that I'm trying to make room in my freezer to butcher a steer we are raising, I wish I had gotten mostly pints. My kids are all grown and my husband and I use 1 lb of meat at a time. I wish I would have tried canning years ago. But I'm so thankful that I've learned how now. God is good and I appreciate people like you sharing their knowledge. 😊

@@Jesusismyeverlastinghope I hope you have a lot of fun canning. Practice makes perfect! :-) I cleaned out our freezer by canning everything in it one year, too. It was fun - I used a lot of the recipes in the Ball Canning Book that otherwise I might not have tried. The quart jars are great for storing dry stuff in in the pantry, so if you don't use as many for canning, they won't go to waste. Also, the quart jars are best for canning some things like cooked beans because they need at least half the jar full of liquid, so only a pint of actual beans in a quart jar.

@@PecanCorner thank you! I will keep that in mind. I thought about using some to make a burrito filling. I came across a KZbin video of it using beans, rice, ground beef, tomatoes, onions, & taco seasoning. I think it was called "Burritos in a Jar" without the tortillas of course 😉

It's so worth it for long tern storage (if you don't eat them up first). They do come out a bit hotter than originally.

Oh my goodness. I was watching videos on how to can green chilies and happened on your video. You just mentioned shopping at United in Brownwood. I’m assuming you mean Brownwood TX. I was born in Coleman. We moved to Fort Worth when I was 4, but I visited my grandparents on both sides until they passed. They lived in Coleman and Valera. My dad had a “farm” in Talpa until 2013.

I'm cleaning mine right now and I'm sad mine don't clean up like yours. I have tons of micro char I guess. It's weird. I'd like to do these in 4oz jelly jars (diced) but - is this possible? IDK what water level they should be and it seems instructs don't show the 4oz sizes

Come Aug/Sep the smell always reminds me of home and that fall is coming! Nothing like NM Hatch Green Chile! We freeze about 75 lbs each year. A bushel of med and a bushel of mild mixed is the perfect temp. Mmm...Hi from New Mexico.

Siphoning isn't something I worry much about, as it does not affect preservation or quality. There are lots of things that can cause it, including the ambient room temp as the canner cools down. We are at an altitude, so siphoning may happen because our air pressure is lower than at sea level. I can on our glass-top stove, so it will not maintain heating as consistently as a gas range does - once things get to temp it is fine, but getting up to a boil takes longer than a gas stove at sea level would.

I recommend wiping the rim of the jar with vinegar before putting the lids and rings on to make sure jars previously used are squeaky clean and not chipped.

I only can these with a pressure canner. You could add vinegar for taste, but acid is used for water-bath canning, and that would need a different recipe and process. This one is only safe with pressure canning.

I can hatch chiles in place pint jars with 1 tablespoon of lime juice and 1/2 tsp of canning salt. This lowers the acid level to a lower and safe level to allow canning without using a pressure canner.

You can add citric acid if you like, but it will change the flavor of the Hatch peppers and even if it's just a little change, you wouldn't be getting the full flavor and would be better off dehydrating or freezing.

Hi Nick, Good advice! I always confirm the recommendations of the National Center for Home Food Preservation. Here is the recipe that I used in this video - it is the same as the one in my pressure-canner book which I showed in the video: nchfp.uga.edu/how/can_04/peppers.html My canner uses a pressure gauge so the second set of instructions is what I was doing. I actually have their book "So Easy To Preserve" but they are sold out of it now, so the website is the source for any canning recipes or preservation methods. Happy canning! :-) Tina
