Hi Angela, this recipe is FABULOUS….I’m 72 and would you believe this is the 1st time ever attempting to do pasta sauce. It came out great thanks to your wonderful instructions. I canned up 25 lbs of Roma tomatoes…would have sent a photo but not sure how to attach to my comment….I didn’t need to add any paste…the sauce thickened up nicely. Once again many thanks!!

I am very slowly recovering. Doctors don’t know what’s wrong with me. I do feel the prayers and was in tears because I felt better today and haven’t felt very good in awhile. The one I have is a cordless Kitchenaid. It is so cool because you plug it in and charge it and then you can use it completely cordless. It is also very powerful.

Can I use just a stock pot to hot water bath them? I have a pot like your but it's a stock or soup pot.

Yes you can as long as its tall enough that would give you about 2 inches above the top of lids.

Yes you definitely can use just a stock pot. Just make sure to put a rack or kitchen towel in the bottom of the pot so the jars don't hit together when the water is boiling.

@@AnnePeaceWithGod It all depends on acidity level. That is why I added the lemon juice to each jar to make sure the acidity level is safe for water bath canning.

You can add a splash of vinager in the water to prevent hard water / deposit on lid. I love the Ball electric Canner too. I got it quite a few Christmas ago.

This sounds awesome, wish I had of had it earlier in the week my grandson brought me 5 gallons of tomatoes. I just canned them not knowing what to do with them, I still have a lot of tomatoes from last year's canned. I will save this just in case I get more tomatoes. This is a really good way to use up a lot of tomatoes. I have never pressure canned this sauce but from what I see it is 20 minutes for pints and 25 for quarts.

@@artofcreationhomestead Thank you, my son-in-law and I cleaned out my freezer yesterday we are getting 1/2 a beef next week I was so surprised to find a huge amount of frozen tomatoes It was a whole 18-quart roaster full to the top I am cooking it down now (all night) we also found frozen onions and peppers I will be canning your sauce today or this evening. I will be using honey also as a sweetener. I can't wait I am hoping to get around 32 pints of sauce it would be a big canner full in my granddaddy all American. It really was a big help with clearing out freezer space. Thank you and Jason so much. God Bless you both for all you do.

We're at 1300 elevation so I add 5 minutes to cook time. I think each 1000 above add 5 minutes.

They are hard to find this time of year and IF you can find one it might be REALLY expensive. Might be better to wait til early next spring. They tend to be cheaper early in the year

Honey, honey?!? 🤯 Tomato sauce is pretty much the only reason I buy sugar anymore. I keep honey but would never think of that for sauces. Hm. This sauce looks yuuummmmy. I don't measure either cause it's gonna depend on your mood that day 😁 Have you added butter before? I saw a few 'authentic' recipes & some mention butter. It does make a good difference. You would not believe how well honey works in sauce. I like using it so much better than sugar. I always add butter to mine when I use it because you can't add it to the canning process. I LOVE butter in my sauce, it makes it so good.

What Oregano doesn't belong in pasta?? Isn't Oregano in Italian seasoning? Im with you Basil & Oregano goes with Pasta sauce.

Having two bubbles coming up in a pot is not a boil. They boil is when the whole thing should be rolling.
