Lots of excellent points. I like that she's using high quality Sicilian extra virgin olive oil, that she adds the herbs at the end, and that she doesn't add sugar. I do use carrots in with the onions for added sweetness. I also roughly seed the tomatoes by halving them and giving them a squeeze.

I was wondering if you were going to break out a hand crank food mill but I prefer my sauce with some body to it (using canned San Marzano I just break the tomatoes up with a wooden spoon right in the pan). With basil, I like to put whole sprigs into the sauce and then pull them out when they have wilted. The whole kitchen smells like basil! Thanks for sharing your family cuisine with us!

My family cooked sauce all day too. I’m virtually the only one left that makes sauce except for a few cousins and some in Sicily I’ve never met. I heard recently you don’t need to cook sauce for hours. Maybe it’s just a traditional thing smelling sauce cooking all day, there is nothing better. But maybe there is no difference I’d like to know more about that.
@AsimplepalateАй бұрын
I've heard similar, it doesn't make a different or it does. I like the tradition of it, and especially if meat is in the sauce I believe the longer the simmer the more the flavors develop. But I haven't found that to be the case simmering fresh tomatoes. They don't need a ton of time! But certainly enough to sweeten them :)

How do you tell a sauce is simmering? I feel like my stove’s lowest setting isn’t hot enough. Should I see small bubbles? Should I use a thermometer? If so, what temp? I want to make this. 👍
@Asimplepalate5 ай бұрын
Great question! Never thought about that, but a gentle simmer is typically small bubbles that aren't as rapid like a medium boil. If that makes sense? I typically keep it on a 3 out of 10 heat wise for a gentle simmer!

Thank you for this video. I have been looking for a tomato sauce recipe that seemed to mirror my sense of what a sauce should be. However, this recipe only includes basil and there are obviously a multitude of other herbs and spices that could be used. Is this because this recipe represents a "basic" sauce and the addition of other herbs might not be appropriate for the dish the sauce is intended to accompany? And by the way, I'm jealous. Your kitchen is far too clean. Please scatter a few dirty pots and pans on the counter behind you in your next video.
@Asimplepalate5 ай бұрын
I'm so glad to hear it, Brian! Yes, I kept it very simple and traditional. But you are more than welcome to add more herbs and spice it up! Well my kitchen is typically bombed from lots of dinners and dishes, but i'll try to show that more in the video ;)

Another easy way to remove skin, and seeds, is to use a food mill. I have one that attaches to my mixer, and it works great to remove both skin and seeds. Just cut the raw tomatoes in have, squeeze out some seeds and toss into a stock pot. No water, just heat. Simmer for maybe 30 minutes, stirring. Softens them enough to easily run through food mill. Pureed tomato, ready to reduce for sauce.
