I make this fresh tomato sauce every year with either my garden-grown tomatoes or summer tomatoes I find locally. The flavors are delicate yet bright and fresh with tastes of garlic, fresh basil, and sweet simmered tomatoes. There's nothing quite like tomato sauce made from scratch! You can gift it in jars to your friends & family, serve it with your favorite pasta or Italian dishes, or eat it on its own because it's just that good!
RECIPE: asimplepalate....
INGREDIENTS
5 lbs fresh plum/Roma tomatoes (or an assortment of tomatoes mixed with plum)
3 Tablespoons olive oil
5 garlic cloves
1 small to medium yellow onion
2 Tablespoons fresh basil
salt and black pepper

I cook all mine skin on with celery, garlic, carrot, onion, fresh basil, fresh parsley and fresh oregano. 2 whole onions with cloves. Once cooked for a few hours and everything is soft you just hit it with a stick mixer and u have perfect sauce. No skin chunks at all. Such a time saver.

Love this simple recipe, Bethany! You are encouraging me to plant tomatoes! I was wondering if you were going to break out a hand crank food mill but I prefer my sauce with some body to it (using canned San Marzano I just break the tomatoes up with a wooden spoon right in the pan). With basil, I like to put whole sprigs into the sauce and then pull them out when they have wilted. The whole kitchen smells like basil! Thanks for sharing your family cuisine with us!

I am nooo gardener, but I find the tomatoes are quite easy :) hahah no food mill, but I would if I had one! I do like to use my spoon like you do! And love that with the fresh basil. Hi Bethany Loved this clip, and watched it twice. My youngest daughter Emma is home on Sunday after two weeks in Italy. She asked if i could make her and boyfriend Pizza when she gets back, as she had some amazing ones there. I made a wood fired Pizza oven 3 years ago which we use a lot, so i said ok. Im going to use your Tomato sauce as a base and just know it will be amazing, as always i will let you know. My friend is going to supply the fresh tomato's, as I planted my tomato plants too late this year. 'Now they’re playing ketchup.' Chris (In UK)

@@Asimplepalate Hi Bethany Tried your tomato Sauce on Sunday along with another great recipe i found for Pizza dough. I was requested not to blend your sauce and leave it chunky. Well as always it went down amazingly, to which i just added peperone (every ones favourite) and a very good quality mozzarella cheese my daughter brought back from Italy. I cant help thinking that wood fired pizza is the best, and its strangely fast to cook. Chris (In UK) PS - What do you call a fake pizza? A pepperphony

It's a great summer sauce, but not just for pasta. This is Hero heaven sauce! I'd grill up some garlic bread, soft. Slice up some meatballs, pour your sauce over it and top it with some parmesan, thinly sliced mozzarella or provolone. Then I'd put it under the Spider just enough to melt the cheese. Makes for a great summer lunch or dinner. It's sweet you guys jar it for loved ones.

Economy's been so bad down here, most of our Italian bakeries went out of business. If you get any more dessert ideas can you share them? With inflation & price gouging, deserts and snacks have gone thru the roof. So it will help ppl make some tasty treats for their family without going into credit card debt!

Another easy way to remove skin, and seeds, is to use a food mill. I have one that attaches to my mixer, and it works great to remove both skin and seeds. Just cut the raw tomatoes in have, squeeze out some seeds and toss into a stock pot. No water, just heat. Simmer for maybe 30 minutes, stirring. Softens them enough to easily run through food mill. Pureed tomato, ready to reduce for sauce.

How do you tell a sauce is simmering? I feel like my stove’s lowest setting isn’t hot enough. Should I see small bubbles? Should I use a thermometer? If so, what temp? I want to make this. 👍
@Asimplepalate

Great question! Never thought about that, but a gentle simmer is typically small bubbles that aren't as rapid like a medium boil. If that makes sense? I typically keep it on a 3 out of 10 heat wise for a gentle simmer!

Thank you for this video. I have been looking for a tomato sauce recipe that seemed to mirror my sense of what a sauce should be. However, this recipe only includes basil and there are obviously a multitude of other herbs and spices that could be used. Is this because this recipe represents a "basic" sauce and the addition of other herbs might not be appropriate for the dish the sauce is intended to accompany? And by the way, I'm jealous. Your kitchen is far too clean. Please scatter a few dirty pots and pans on the counter behind you in your next video.
