I sometimes use a stock pot to can and I line the bottom with jar lids for a rack. Works fine!

I do not have a printable for this. I use the recipe from the ball complete guide to home preserving. Sometimes they have printable recipes on their website!

I just tried canning some peppers using your method. And I was wondering, is it normal to have some bubbles coming from the bottom of the jar around the peppers right after you take them out of the water? Thanks.

Awesome, I like the Ball recipes they’re pretty easy. Most everything that I can, usually continues to boil inside the jar after I remove them from the canner for a little bit. 😊

How long do you let the pickled peppers sit on the shelf before using them? last year we made pickled radishes, and they smelled so bad that they were almost inedible. we didn't throw them out, instead we just set them on the shelf and left them there. 6 months later I opened another one, it no longer smelled bad, and tasted amazing. I think it really just took time for the pickle brine to actually pickle the radishes.

How soft are the peppers compared to store bought? I stopped making my own because they always got too soft and we preferred the flavor and texture of Vlasic jalapenos. I can't find those anymore so I'm ready to try canning them again.

I used to buy B&G pickled jalapeños from the store before I started growing them. They aren’t exactly the same, but they’re good! Pickle crisp makes a huge difference in texture, and staying close to the processing times so they don’t get over cooked. I will try and reply to this with a short video showing what they look like. As for flavor, they are as basic as it gets, pickled and spicy. If you like the flavor of the Vlasic ones try and look up the ingredients and see if you can mimic those, that’s what I do with some things. 😊 Let me know if you have other questions!
I was ready to give up on pickled hot peppers then I found this and I have pickled all my peppers using this recipe and method. I add 1 clove of garlic and 1 teaspoon of Oregano to each jar before packing the peppers.
