the jalapeno juice/marinade leftover - I have an idea - I would make jalapeno gummies especially good around cold and flu season. the capsicum in the pepper is good for the throat. The sugar makes them edible but still spicy. On cold days and nights that capsicum would warm a body up.

I used the left over brine to can finely sliced onions! I did them exactly the same way as the Jalapenos and they're soooo good! Great on burgers and sandwiches!

I’ve seen recipes where the brine gets boiled down until it thickens a bit, before adding it to the jars full of peppers. That might decrease the amount of brine left over. Gives a thicker consistency to the finished product.

Hello there, I made your cowboy candy and I loved it. One thing I did with the leftover syrup was that I reduced it and made a very sticky, thick syrup. I now have used that in other recipes, I tossed brussel sprouts in it and so far that’s my favorite. I’m a huge fan of your page, I myself am from Monroe and don’t live there anymore. It’s nice to watch the two of you, it reminds me of home. ❤️

We love cowboy candy! We do slices and use it everywhere from salad to stakes and everything in between! I need to make some more for we are down to the last jar. Here is the recipe I follow and it’s delicious! I also add other peppers like my cajun peppers or whatever grows in the garden at the time. I use red and green for color. Hey, we eat with our eyes first 😂. 3 lbs jalapenos, fresh and firm 2 cups cider vinegar 6 cups granulated sugar 1/2 teaspoon turmeric 1⁄2 teaspoon celery seed 3 teaspoons granulated garlic 1 teaspoon ground cayenne pepper 1 Tablespoon Mustard Seed Wearing gloves, remove the stems from all of the jalapeno peppers. The easiest way to do this is to slice a small disc off of the stem-end along with the stem. Discard the stems. Slice the peppers into uniform 1/8-1/4 inch rounds. Set aside. In a large pot, bring cider vinegar, white sugar, turmeric, celery seed, granulated garlic and cayenne pepper to a boil. Reduce heat and simmer for 5 minutes. Add the pepper slices and simmer for exactly 4 minutes. Use a slotted spoon to transfer the peppers, loading into clean, sterile canning jars to within 1/4 inch of the upper rim of the jar. Turn heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes. Use a ladle to pour the boiling syrup into the jars over the jalapeno slices. Insert a cooking chopstick to the bottom of the jar two or three times to release any trapped pockets of air. Adjust the level of the syrup if necessary. Wipe the rims of the jars with a clean, damp paper towel and fix on new, two-piece lids to finger-tip tightness. *If you have leftover syrup, and it is likely that you will, you may can it in half-pint or pint jars, too. It’s wonderful brushed on meat on the grill or added to potato salad or, or, or… In short, don’t toss it out! Place jars in a canner, cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a full rolling boil, set the timer for 10 minutes for half-pints or 15 minutes for pints. When timer goes off, use canning tongs to transfer the jars to a cooling rack. Leave them to cool, undisturbed, for 24 hours. When fully cooled, wipe them with a clean, damp washcloth then label. Allow to mellow for at least two weeks, but preferably a month before eating. Or don’t.

I agree with your message on freezer storage vs canning. Two years ago the remnants of Hurricane Fiona left me without power for three weeks - I lost a freezer full of meat.

I totally understand the canning rather than freezing! I live in the Florida Panhandle and in 2018 we were struck by Hurricane Michael, a Category 5 hurricane. Our power was out for 31 days!! Because we evacuated, we lost everything in our freezer and refrigerator. Had all that food been canned, we would not have lost it, so I can definitely relate.

Used 14 lbs of mixed hot and sweet peppers that were gifted to me to make cowboy candy today. Ended up with lots of syrup left over. I canned that up to so when my garden peppers are harvested I can make some more!

I love cowboy candy! I can up the extra syrup to use for cooking, etc. It’s such good stuff! I agree with you about gas stoves and canning instead of freezing; we have a gas stove for that same reason. Last summer after a bad thunderstorm knocked out our power, I was still able to can spaghetti sauce from my tomatoes.

Definitely canning this year!!!!.... It is absolutely horrible to loose your garden and what you've canned, under any circumstances. In August of '21 my husband's and my homestead got flash flooded and was covered in 7ft of water. I was growing enough to can many items for a year. It was just awful. We lost our home as well, and are living in a camper now, but I found the space to to start my seeds! Have actually been suffering from depression on and off, and the last few days have been binging your channel...getting inspired, and finding comfort watching you! ❤️❤️

I've been making this stuff for years. How Cowboy Candy isn't a condiment in every household I have no idea. It's great on burgers, hot dogs, crackers with cream cheese, especially good on pizza. And that juice is liquid gold as a marinade...great for steaks, pork chops, chicken, fish...oh, marinate some prawns in that stuff and grill up some skewers. 😋 I'm with you on the size thing. I used to do slices, and they're fine, but I prefer the smaller chunks. Since I grow lots of peppers I like to change it up from jalapeño once in a while. Serrano makes for excellent cowboy candy. I've also done it using a combination of sweet peppers & habaneros...super tasty.

@@lindagary7077 I took 2 or 3 pints of my brine and added maybe 1 - 2 cups of chopped up cowboy candy to it. I added a pack of powder pectin to start (I think I added another one because I generally have no idea what I'm doing and was winging it) and boiled until the set was nice on a cold plate. I'm just starting my canning journey so it didn't set 100% but it's wonderful! I gifted some of it out to my family testers and they enjoyed it!

But I Like Your Version Better*** And wow I need that Kitchen Aide attachment 👍I live in Michigan as well and I know about needing a gas stove. We installed one this year as well ,2 gas heaters. We have a generator hooked up to the house as well last year. So we now can roll it to the house and hook it up. I want to build a box for it so it stays Permanent in its spot , rather than hauling it each time. Especially. During the snow season. Thank You so much enjoyed this Allot****👍

I found this video on my computer and it took me forever to find it on my tablet so I could comment. I have been making cowboy candy for years now. I always get asked how could you use it other than as a relish for barbecue. Here is my favorite recipe. 1 package of Martha White apple cinnamon muffin mix 1 egg 2/3 cup of milk 1/4 cup of chopped cowboy candy Heat your griddle and fry them up like pancakes. Top with butter and syrup.

This is the best condiment, grew 5kg chillis outside this year, 1st time we have made Cowgirl Candy, its brilliant. We live in Somerset UK have been canning for approx.15 years and use jars with lug lids as are unable, until recently to get proper canning jars, also vv expensive here. Ahh at the end came up a link for a farmer's market you went to last year. Oh what a difference a year makes. I have just been no where. I could weep. Don't really want to risk the virus, do all shopping online and husband picks up. That's our deal!! LOL Just I want normal back. Not been with grandkids since before March and they live close. If you're in general good health, take 2000 in Vitamin D3 and 1000 vit C every other day. Drink 2 quarts water a day and get at least 10 minutes of sunshine. Get masks, gloves and hand sanitizer then get out to the store! Steer clear of Walmart and look for store hours for seniors 60+. Your mental health and immune system will thank you. Keep your cell phone off and away, pull out your debit card or cash before you enter the store so your not touching your wallet. I'm 64 and have been shopping for my parents, my house and some friends since February. Don't let fear rule your life💕

Canning up some of these right now. These are a favorite in our house and we can never seem to have enough. They make great gifts too! Since most of our friends and family can't handle spicy food, I use Nadapenos. We leave out the cayenne and the pepper flakes too. Even the kiddos can eat these! They have the flavor of Jalapenos with NO HEAT. Happy canning!

I made my first batch of cowboy candy last season, 2020. I sliced mine kinda thin on a mandolin. Held them by then stem end and sliced till I got close to the stem so I wouldn't have to double handle them. The did shrivel up but that's what I like about them! They aren't real thick and I pile em high on burgers and other sandwiches. I used red and green jalapenos and they're so good!

Oh I will definitely be doing this to add to my other jalapeno canning projects I do every year! I didn't weigh one of the batches of jalapenos I bought but it was a 5 gal bucketful & that was only 1 bunch amongst others. I will grow my own hopefully next year but I'm only just back to my hometown just recently where I own my home here in SW Louisiana, so I did start a fall garden but not the quantity I need. I'm just finding y'all channel & I'm absolutely loving it. So binge watching it is. I do lots of canning, dehydrating, preserving lots for my food storage & nothing goes to waste. If you re-use your leftover liquid for another batch, be sure to readd some vinegar since the peppers of the first batch will have watered-down the acidity in your leftover liquid.

I used my leftover brine for another batch (just this morning) but didn't know to add more vinegar. Will it be ok?

Dolly H. Not sure, but best to use it first or refrigerate. It is a low acid food that is not adequately acidified. You are still within 24hrs of yr canning session so fridging is ok.

@@angeltravis6257 I personLly would not do it. I can the juices and use as a marinading liquid. Yr guess is as good as mine. The more vinegar the better safetywise, tastewise,... ???

Love Blocks when we visit I always go out and get their veggies hit it just right one day, when the corn came in we stuffed as much as you can in a bag. We make a pepper jelly down south goes great with a cream cheese. We love it hot down here. We have a lot in common not many like cornbread.

Alright, alright, alright!! After years of hearing about this stuff, I decided I needed to fig out what the big deal is so made a batch. I used a mix of jalapenos and cajun belle peppers from my garden just to change things up a bit. I got 5 half pints candy and 5 half pints of leftover brine. The taste of that brine is AMAZING - I couldn't keep my spoon out of it!! I will use it for something - can't wait to try the candy! Oh my!! Thanks for great video!!

I have 12 pepper plants, mostly Anaheim, poblano, banana and 2 jalapeño plants. I work a lot so I made self wicking “ self watering “ 5 gallon buckets which I only fill once a week. I pick a small batch a couple weeks ago but I picked about 10 pounds today and they’re only just starting to produce. 😳😬 I will be using your recipe for a the majority of them. Then I’ll use the traditional brine for a bunch. Great video Thanks 🙏

We just had a propane powered generator installed this year for the reasons you mentioned. I do can but I find some things just taste better frozen.

Ugh, no electricity. That is one of my worst nightmares when I’m using my electric Presto canner and when I’m in the shower. I grew up cooking with gas stove and still do. I just can’t get the hang of electric. I remember popping popcorn at a family member’s house and I set the plastic bowl down on a burner that was just used-yeah, it had perfect rings melted through. I’m sure the new glass tops are easier to clean than the heavy grated gas stoves, but that’s the sacrifice. Plus I recently had a glass shelf that covers the crispers in the fridge Totally Explode in my hands during cleaning! Not a fan of glass. We replaced it with plexiglass. I’m not sure who designs appliances, but I think I missed my calling. Do any of those engineers think 💭 about how these appliances get cleaned? I have words every time I clean the cooling fins under my fridge. We just ordered an upright freezer because I’m tired of searching for items, defrosting and standing on my head to reach the bottom. Most have glass shelves and I don’t understand that as it will impeach air flow. And I’m not up for another Exploding glass event. Good job canning in the dark.😊

Incidentally I have found if you touch the peppers with bare hands (accidently or otherwise) regular soap and water doesn't remove the oil as well as washing with milk. Weird but works for me.

I plan on making it this year. Just made a small batch of jalapeno pepper jelly which came out tasty but hubby will like the cowboy candy
