Honey Pickled Radishes

Yields: 6 1/2 Pint Jars
Ingredients
2 lbs radishes (without tops and roots)
2 1/2 cups water
2 tbl sp sea salt
1 1/2 cups water
1 1/4 cups white vinegar
3/4 cup raw local honey
1/4 red wine vinegar
2 tbl sp black peppercorns
Instructions
1. Thinly slice radishes with a mandoline slicer.
2. Add sliced radishes to a large glass or stainless steel bowl with 2 1/2 cups water and 2 tbl sp salt. Cover and chill for 1-2 hours.
3. Sterilize 6 half-pint canning jars by boiling for 10 minutes.
4. Drain radishes and rinse, then set aside.
5. Combine 1 1/2 cups water, vinegar, honey, red wine vinegar, and peppercorns in a medium saucepan over high heat and bring to a boil, stirring occasionally.
6. Reduce heat, cover, and allow to simmer for about 15 minutes.
7. Pack radishes into hot, clean half-pint jars.
8. Add hot vinegar mixture, leaving ¼ inch headspace. Make sure some peppercorns get into each jar. Wipe jar rims and adjust lids.
9. Process filled jars in a boiling water canner for 10 minutes.
