I'm not sure I want to use the Alum. Would it be ok to leave it out ? Also, do you tighten the jars before you turn them over or just "finger tight"?

It is fine to leave out. It does help keep the other veggies crisp. Finger tighten. Blessings.

The lime is to keep the acid in the tomatoes safe. You can also use vinegar if you prefer. Blessings.

Canning recipes are carefully balanced for the right acidity and sometimes salt levels to result in a safe to eat food product. Do not ever alter canning recipe ingredient amounts unless you are halving everything, doubling everything, or so on to everything in the recipe.

Those peppers would be fine. I would probably buy 12-15 tomatoes depending on type and size. A beefy tomato is best. Blessings 😊

You want to keep them warm so they are fine while you prepare your veggies but at least for 10 minutes in a preheated oven at 250 :)

Made this recipe tonight except I added an additional 4-6 cups of tomatoes. I’m concerned because a few have yet to seal but I’m trying not to touch for atleast 12 hours! Fingers crossed!

What is the alum for? If it's for keeping veggies crispy, can grape leaves be blended up with the cilantro? Also, does it thicken up after it cools?

Yes. I’m not sure on the grape leaves but it would be worth’s try in a jar or two. It doesn’t thicken. Just cut your veggies bigger for a chunkier salsa. Thanks for stopping by. Blessings ❤️
