I know this video is older but I was watching because I have done tomatoes with and with out skins. Especially chili tomatoes. But the skins do not go to waste, I dehydrate them into tomato powder for soups and sauces. Like a tomato boulin.

I do my sauce like this: I cut the cores out then blend it to a purée. Then I dump in in a large pan and boil it down to the thickness i want. Then pour into quarts or pints. Add a bit of lemon juice and salt in each jar. Process in a water bath 35 minutes per batch. Tastes lovely and no waste whatsoever. Freshest tasting sauce!

That’s what I do as well. Yesterday I did chili base (pints) and pizza sauce (half pints). I just puréed, added seasoning, and cooked down. I used the leftover chili base today and it was fantastic! Getting big basket of tomatoes from Bountiful Harvest on Saturday (my tomatoes are still green 🤦‍♀️) and will do spaghetti sauce. Tomato sauce is done.

I use San Marzano tomatoes that have thin skins anyway so I just core and cook too!! I do use a roaster because it holds more, I don’t dice either just immersion blend it all.

For all the years of canning and freezing tomatoes, I never remove the skin. I use it as a whole food for maximum nutrients. I wash my tomatoes well in a water and vinegar bath before dicing.

If you are canning with high acid tomatoes, there is no need for lemon juice to be added. There are so many low acid tomatoes now that it is important to know what variety you are canning. I love the taste of high acid tomatoes.

Iv never peeled my tomatoes, always were told they hold much of the vitamins,,, maybe my Mom was lazy,, or maybe super smart,,, ,,,she had 10 kids and all her canning was great,,, none ever spoilt,,, Great video,,,,,,

@@sherryblankenbeker5730 no, you dice,and cann, then prepare/cook. ,🙂 skins arent big, and softened. Like commenter above, skins of all veggies and fruits (i cant say everything foreign, ive never prepared) contain lots of vitamins n minerals. HAve a blessed day.

For those of you that have a Teen or are Acne prone... take out a few that are getting real soft almost over ripe... then wash and then just chop and blend. Then put in jar in refrigerator. Before they shower in morning or evening have them put some in their hand or on a Brush or cotton ball works well. The apply to their face. I like to let mine dry then I rinse then I do it again. But it is great for inflammation, acne and redness .

Nice to see someone else who canned tomatoes with the skins on. Blanching to peel off seems like such a waste. and extends the canning process way too long. Beautiful work "Skipper". I am a new subscriber, and am enjoying watching your cgannel.

just learned this last year....if you pick your tomatoes and you don't have the time right then to can them, they cut off the tops, and freeze them in gallon bags....the next day or whenever you are ready to can, take them out, put them in a big bowl with some water and as they thaw, the peels come off all by themselves...

I did try something new! After I saw that you waterbath meat. I canned and waterbath my spaghetti sauce with hamburger in it. It came out wonderful. I did this back early July and now its all gone! The last jar was ate tonight! Thank to you, I'm really enjoying ☺ waterbath canning!

Never do this with a waterbacth canner. If you add vegetables or meat you must use a pressure canner. I had jars seal and two weeks later they had mold in them. Had to throw them all away. Check with your local extension agency.

Canned venison is my favorite. I now can all my venison except the back straps and loins. All the rest is canned. Used to vacuum pack and freeze it all. Now i can. Makes it super tender. No need to thaw. Just open up a jar and toss in and heat.

Maybe I love your show and something that you should do when you wash the tomatoes is add some lemon juice and maybe a little bit of baking soda to the solution you're washing the tomatoes with. This helps really clean and sanitize the skins of the tomatoes. I use a solution like this whenever I harvest my indoor herbs and I want to dip the herbs in a solution like this to get rid of any pests or hair stragglers or dust or whatever might be on my spices and herbs. And it works really well and it doesn't compromise the Integrity of your Harvest

I watched all of the Amish canning videos and loved them. I tried beef stew and ribs. I sused salt, ground pepper, onion powder and garlic powder as a seasoning. Used the same seasoning when I cooked a rack of ribs Sunday and the were just out of this world. Love your show.

I have found I prefer pressure cannning since it's only 15 min at 10lbs. I also don't use the lemon juice when I pressure can.

Thank you so much for your channel, here in Greenwood BC Boundary Country was wet summer. So we have alot of green tomatoes. Frost is here so tomatoes are in basement to ripen up. Keep them in fridge after to waite for rest to catch up. I will do what you have done, hot water bath. Thank you again love all you knowledge.

I LOVE canning tomatoes!! SO much better than store bought!! I enjoy canning, after your done, you have food to last till the next year. I always skinned my tomatoes, & a couple of years, I put them through a machine that removes the skins & seeds. The skin & seeds are not good for us.

Just subscribed. Have to admit it, it was the hat. Steeler fan since ‘65. But I also enjoyed the way you keep it simple. My wife and I will be harvesting my garden soon, 60 ‘mater plants. Half and half slicers and plum. Thanks!

Wonderful work! I like to use the tomato juice in chili instead of water. It's a great idea to can the juice up after straining the tomatoes out. I usually pack it all together, but I think this year I'll try this way. Our tomatoes are still mostly green, it hasn't been too warm at least for tomatoes. I have 44 plants and am hoping they don't all turn at once...we'll see. Thanks for sharing.

I freeze my tomatoes till I have a big batch to can at once. When they thaw out, and while boiling, I scoop out the tomato water and bottle and can that too, to use later as a ‘tomato brine’ for soups. So much better than water!

I forgot the lemon Juice In my plain tomatoes sauce I did put salt in I should do them over . Also made spaghetti sauce . That turned out good . Thank so much for your videos ❤

You are just awesome. We had a great year for tomatoes when others seem to struggle in our area. We have a short growing season and we did 30 quarts of tomato sauce, salsa and tomato juice. But before we got our first frost /snow, we gathered another 50 lbs of green tomatoes that have been ripening and today I’ve decided to process with skins on and we have another 30 quarts. So excited and thank you for your content and channel. Great work.

Im going to be making da sauce in the next day or so. Got my roaster, and im coring and deseeding them but the skins are staying on. Hoping my immersion blender works well to obliterate them skins haha 😂

I was never taught to use lemon juice in tomatoes when I can them. I only use salt and water bath them for 45 minutes.

Everything I can is new to me. I’m just a beginner. I grew up with my family doing all the canning. I prepared the foods but never canned them. I didn’t pay much attention. I have no one left so I’m trying to pass it on to my kids as I’m learning. So far I’ve done tomato sauce, green beans with my husbands recipe ( I pressure canned them but with all the balsamic vinegar and sugar I’m just not sure what to do.) I did corn and it turned brownish 😂 🤷🏼‍♀️ and cowboy candy was the easiest so far.

I saved my tomato juice, too! I froze it and made tomato meatball soup at a later date. I just added some tomato paste to make it a deeper flavour. P. S. I just subbed

I make Bread and Butter Pickels ( 4 cases so far) Jelleys and Jams Green Beans Carrots almost any Vegetables . Dehydrate fruits. I really have no problem if the store is out of something because I have my Canned goods. Take Care All

Cutting tomatoes for 3 full days? What a wonderful problem to have. I don't remove the skins either and not removing them is more popular then you might think. I think my favorite thing to can is meat. Makes no difference if it beef or chicken.

Love the easy of this recipe. I used green tomatoes in my recipe since I planted tomatoes late into the season and they did not get to ripen before my first frost hit on Oct 19.

I don't blanch or peel my tomatoes. I don't even cut them up, I cut them in half and stuff them in a jar. I also crush some tomatoes and use that for the packing liquid.

We primarily use our canned tomatoes for macaroni n tomatoes. Would canning like this leave a lot of excess skins with the meal/food? Have you ever used them like that or tried them like that? Would make life so much easier to do it like that. Oh and we can in quarts usually only cause we LOVE macaroni n tomatoes (a big staple in our home lol! can be a stand alone meal some nights lol!) Thank YOU! for all you do with your videos. I have learned so much and so glad I found your channel!! (ps. have totally enjoyed the amish canning segments and can't wait to see more in the future from you, be it canning or recipes, you totally rock!!)

Going to try this this year.Because we live in the tropical far north of Australia our growing season for veg is Winter { if you can call it that} as it is dryer so no high humidity.Hopefully we have a good crop.

I’m doing pint jars, so does the 35 minutes start once the water comes to a boil? I would assume so, but thought I would ask. Also, had a little juice leftover, I just drank it and oh so good!!

I was told tomatoes don't have 2b process (?); they just last longer when they're process ( ur opinion plz). They would just peel & squash tomatoes in jar, sprinkle a little salt & that's it; never done it; dnt kw

I slice mine a half inch thick a use a food chopper, skin and all! Small pieces of skin you hardly notice!

Skins on is the only way I can my tomatoes. My mother in law had a cow that I left the skins on, but I grow organic and wash em well and been doing it this way for years…. I do not chop them either, i cut in quarters put them in the pot and then use my hand immersion blender to puree them up while they cook..I can my cherry, grape and smaller tomatoes too…

My cuz & I both can tomatoes a little different, in the fact we don't water bath or pressure can. Heat them up to boil just like you did, scraping the foam off the top & continue boiling till they are pretty much done foaming. ( Maybe 10 min) Then we ladle into boiling HOT jars adding the salt & lemon juice, wipe rims & add hot lids, screwing bands down finger tight. Place on the counter & they will seal within 10-15 min. Have done it this way for years....our way of rebel canning??

I just have a question for anyone that knows. . Can you pre dice the tomatoes somehow and keep in the fridge until you have plenty, or should you just put the tomatoes you get in the fridge and dice them all at the same time when you're ready to can. I'm very new to this. Thank you.

You can refrigerate up to 3 days I think.

Doing this now. It's taking forever for my tomatoes to come to a boil.... I'm almost at the canning phase!
