I'm now a letter carrier for the USPS in New Jersey and still hunt and grow. The one thing I've always regretted was never learning how my grandmother canned, preserved and seasoned all of the things from their farm. That was an excellent tutorial Ms. Clay! My Bride and I have canned meat, and everything else, since day one (46 years and counting!) we used an old National (Presto) canner until last year when I bought one of the big 941 All American canners.....they have a gauge AND a petcock (i.e. Jiggler, rattler, etc.) Watching that guage for an hour and a half is a maddening chore, I dread doing it, so the jiggler is way less of a chore to listen to! This is great! My sister ran into the same problem with bad kids this season also. You're right about respecting pressure canners. Once at the church I grew up in, someone cooked mashed potatoes in one and it did blow up. Destroyed the vent hood and put a dent in the ceiling. Luckily nobody was in there.

I do around 21 pints a season because it’s only feeding 2 our kids are out of the house already but I still use the granite canner boiling for 3 hours. I can remember mom using the old jars with the wax and we still have some may have to go back to that style if lids don’t come available or price comes down ✌🏻

I have always used that sort of meat but all the books I have seen so do not add liquid (because you would have to much in the jars once the meat releases it’s juices) I personally wouldn’t add liquid because even with leaner meat you still don’t know how much juice the meat will release. Some of my meat I put in my jars I consider to be leaner stew meat.

Yep I have only ever used the Ball brand and this year all the smallest jars were sold and same price as the bigger quart jars so yeah. We needed more since my parents newer house has this big garden. I have met people who do can own meat for food but have not done it myself. The thing we do with a bad jar lid is mark bad on them and use them for refrigerator stuff that gets eaten right away and yes they do only last about 7--10 years with a few years less if you bought the cheaper Ball lids. Another good brand if you can find them are Victoria brand but they are hard to find so few use them and do not self seal they are not an older brand but new they do not self seal so you need the wax rings for them. I have only ever seen them one or two times at a Farm and Fleet place called Runnings in my town. So save the off brand stuff to do refrigerator stuff, we have even used the Atlas jars from a brand of pasta sauces after removing the label to do refrigerator stuff since they are sturdy jars.

Just a heads up for you the 5 pound jiggle is only for pressure cooking there is absolutely no canning recipe that calls for 5 pounds the minimum wait for pressure canning is 10 pounds at sea level up to 2000 ft according to the USDA. 15 lb for 2000 up to5000ft. Thanks for the video, my daughter is in Nome Ak. And is subsistence hunting, I’m trying to find info on canning Venison for her. Another thing is you don’t have to replace your presto 23 quart it also can be used with a jiggler. I think Amazon has the presto jiggler for $11 right now to. You just put the jiggler where you would put the dead weight. You don’t have to add time. Your 15 lb for 90 minutes is save.

You know, you can buy a jiggler for for your pressure cooker that has the gauge. That's how I use mine. I can listen to the sound the sound and glance every once in a while at the pressure gauge. So the best choice would be to have a pressure gauge with a juggler on it.

FINGER TIGHT Don't crank those lids down too tight, just enough to make contact between the rubber and the glass The air and steam inside the jar gets pushed out under that lid, then it sucks down and seals as it cools. If you crank down too tight, it's all trapped and causes exploding jars, cracked jars, and air pockets that can spoil your product. So just spin down til you get fingertip resistance

I have a wonderful All American canner that I have only used once. This video motivated me to get it out and use it more often. I live in Florida (very close to where you used to live) and grow tons of veggies in the garden. I don’t can them because it is SO hot here and don’t want to heat up the house. You made me realize I can do this outside on a camp stove. Thank you!

Just buy a weighted (5-10-15lbs) jiggler and replace the one on your dial gage lid. That’s what I did.

I'm pretty sure you can get a steam vent and jiggler weight conversion from All American for less than $30 for your newer pot. I have a 921 from them. Great canner, built like a tank, but doesn't have the easy twist lid like yours.

No you can’t water bath canned meat. It has to be pressure canned.

When you leave the fat on does the meat have a gamey taste, I normally trim it off.

Nope. No gamey taste. I just chop everything up and put it into my jars. If there are really huge chucks of fat I would trim some but for the marbley fat in the meat and even some fat on the outside I just leave it in. The fat is what makes it nice and rich when you can it .

Question... my canner suggests not higher than 12,000 btu burner. Are you able to adjust your outside burners low enough to prevent damage to the pressure cooker?

Yes. I’ve never had any trouble with them. My burners usually stay on low or just a bump up from that when I’m pressure canning. I never use them on high while canning.
