Why do you remove the ring during storage?

If the seal isn't good, the rings can falsely hold the lids in place. By removing the rings it makes it easier to see if the seal is no good in the pantry. If the lids do become unsealed, not having the rings there also can prevent the possibility of the lids somehow resealing themselves.

No I'm not. This is a standard processing time for waterbath canning. If you are using a pressure canner, the time is less.

Fresh lemon juice can vary in acidity levels, so to be safe it is recommended to use bottled lemon juice. You can use citric acid in place of lemon juice, but the amounts are different. Depending on jar size just make sure to use the correct amounts for either lemon juice or citric acid, it would be listed in the canning recipes how much to use. 😊

Hi Cheryl!! So this specific recipe doesn't have any of the extra things added, but there are other recipes that are similar with seasoning, or basil and garlic. Like there's the Basil-Garlic Tomato Sauce on page 33 that I want to try out this year. Just make sure that you're adding enough citric acid, or lemon juice to each jar. 😊

I looked up a few of the canned tomato recipes in the Ball book, and they say it's 2 tablespoons of bottled lemon juice per 1-quart size jar.

Seeds aren't an issue for us. Depending on how much time I have, I use the food mill and it removes seeds, but it doesn't make a difference flavorwise. When I roast cherry tomatoes to make feta pasta, or cook down larger tomatoes for fresh sauce, the seeds don't impact the flavor. 😊
