Thanks Michael, I’ve used the paste in the past but I find you don’t need a lot but still excellent stuff. You just have a bit more control I think with the beans and are less salty. You don’t really need much for each dish because they are potent and what you end up with it being too salty. I don’t add salt to the dish or light soy sauce , that would be salt overkill . It’s also nice to see the beans in the dish . With the paste you don’t have that effect . I have to say Michael the beans are great and only £1.49 from my Asian store and really can last for years, cheers Michael 💕

They are all different prices. I bought mine many years ago for £175 . At the time there were none available in the UK so one imported from America, the demand for them are a lot higher now due to my channel and most have them. You would basically just Google it and see what comes up, thanks pal ❤️

I would use 1 heaped tbls, if you use anymore than that the dish will be too salty after you’ve added the rest of the ingredients. I’ve used it many a time but still prefer the dried beans. Just a preference ,both wil give you the exact same flavour. I like to see the beans in the finished dish. With all LKK they’re incredibly salty so you really don’t need much whatever one you use . Takeaways all use them . Hope some of that helps Matt 👍

Is your beef slightly frozen there when cutting it? It's not collapsing like it does when I have tried thinly slicing it.

Most takeaways you will find will slice the meat partially frozen to ensure evenly thin slices as I always do . Within 10 minutes it should be fully defrosted. Sometimes I will mention it in some of my videos or maybe leave a note in the description, anything else maté just back to me , cheers pal 👍

Thanks Elaine , these are dried black beans and all you do is soften them with boiling water and then strain . You really don’t really need to do much more with them. You could use the tinned ones but lack in flavour. The takeaways I’ve worked in as I said just soak them, they never crush them , Black beans are potent enough and go along way . A small amount is all you need and they are extremely salty. Thanks Elaine 👍

Thanks Jenifer yeah your right it’s normally used for roasting. Takeaways all use topside because it’s cheap to buy in bulk but it has to be tenderised or it will be tough and chewy. Takeaways don’t have the time to roast full joints and have always used this method for tenderising ,that’s achieved by using bicarbonate of soda. This breaks down the fibres in the meat. Once applied it works straight away. For example if you left it on overnight you would wake up to a bowl of mush. The beef will have completely disintegrated so that’s why 40 minutes is plenty. When you add it to the beef it will instantly smell like fish and that’s why you have to completely remove the bi carb once tenderised . I’ve seen some people leave it on but that’s absolutely crazy so remember to remove it . Let the meat dry a bit first before you marinate with the other ingredients. Thanks Jennifer . And also a little note, black beans are incredible salty so you really you don’t need much . Some people think the more you use the better the flavour but it’s the complete opposite, they’ve then just poisoned it with salt ❤️
