I canned my meat with potatoes, carrots and onions as well as the meat only. Our favorite is the stew and 2nd with noodles over mashed potatoes. Any leftovers goes to hot beef sandwiches with mash potatoes and gravy! Loved to can, thank you for all your great videos. One more thing I forgot to mention is for juice over the meat to can I use beef broth, yummy!

I've been canning meat for only 3 years, now. I learned it here on KZbin. Thank goodness! Where has it been all my life? It's so awesome and it makes a quick, healthy meal so much easier. Thanks for doing Canuary. I cannot believe there's a company out there still willing to give many of us the opportunity to try their products free! It's very nice.

I canned with my mom and grandma when I was young, but working more than full time, having two kiddos (one special needs) didn't leave me with time or energy to can for way too many years. Funny little story about canning beef roast! I watched one of your previous videos about canning beef roast and went out to Sam's Club and bought a ginormous chunk O' beef, really cheap. Came home, and carved it into nice size cubes and canned it up. My wife came through the kitchen and thought it smelled, well, like.a lot of raw meat and got turned off. As soon as it came out of the canner I suggested we pop open a jar and have it for supper. "Oh, let's not. Maybe it needs to sit a bit." I tried again after a few days, and she said, "I don't know. I'm just not in the mood for roast beef right now." Hmm. The next night I didn't ask, I just proclaimed, "we're having roast beef tonight and it's going to be great!" I made some gravy with the beef stock in the jar, and warmed the meat up and served it over freshly mashed potatoes. It was SO duhlishus and now it's one of my wife's favorites of my canning projects! SO tender and tasty!

The pop lock sometimes gets stuck. When it pops up it locks the lid so you can't open it accidentally while there is still pressure present. It's not a bad idea to ensure your pressure lock is free prior to using. A little vegetable oil will lubricate it to avoid sticking. The pressure lock has no relationship to the required pressure. It has a preset spring that allows it to popup at a certain pressure thus locking the lid so it can't be removed.
