looking to try this one, would you use real caramel (made with heavy cream) or no because its a milk based product? I was sure if using real caramel versus extract made a taste difference.
@TheBruSho2 жыл бұрын
Yeah that was my problem, finding caramel without dairy. If you can then I think it can work. But also consider that the sugars in caramel will ferment out leaving little flavor behind. That’s why in the end went with extract to get as much caramel flavor as I could

I’m wondering how you targeted that green apple flavor just by using store bought juice. Any way to try and target green vs red flavors ??? Or any advice ?
@TheBruSho2 жыл бұрын
To me green is more tart and red is more sweet. So it could be just my mind playing with me but that’s what I got. So if I wanted it sweeter I would stabilize and add sugar
@zachburton41902 жыл бұрын
@@TheBruSho thanks! Last question haha, how would you personally go about having a carbonated product if you did want to stabilize and back sweeten/ have a sweeter end result ??

Hey Bru. great content as always. I bought Cider from a local Orchard, but the Cider never started to ferment, so that was a disappointment. (Used Saf-Ale-US05, DAP mixed and waited, just no fermentation). Now I'm trying with store bought juice and try to figure out what I did wrong as this was my first time. I found juice with Vitamin C added (ascorbic acid). I was wondering if that will prevent any fermentation as it wasn't mentioned in your video. Thanks
@TheBruSho3 жыл бұрын
That’s weird about the orchard cider. I wonder if they used some preservatives in it? And vitamin c shouldn’t be a problem. Just keep an eye out for the other ones I listed and you should have better luck!
@wfqsfg3 жыл бұрын
I'm wondering if they didn't pasteurize the cider they put a stabilizer in it to keep it from fermenting from wild yeast in the bottle. I've made several batches with store bought apple juice (Kroger). They all contained ascorbic acid. There were no fermentation problems. I have one that just finished fermenting. I used S04.

How long did you carbonate for? I’m a little more than 2 weeks into keg carbonation at 15psi and it’s still not as carbonated as I’d like😬
@TheBruSho2 жыл бұрын
Interesting? Do you have a leak somewhere? Could bump it up to 20 psi if you want it ultra fizzy. Usually only takes 1 week when left to 15 psi carbonate.

Hey Trent, just curious why you don't have to heat it up to kill off any wild yeast or bacteria that might be in the apple juice? Thanks for sharing another great recipe!
@TheBruSho3 жыл бұрын
If your going off straight juice from apples then that’s probably a good idea. But most store bought juice is “lightly” pasteurized. And if you pitch enough yeast it will over power anything that could grow
@iamthenra19683 жыл бұрын
@@TheBruSho Trent have you ever had a batch of cider become carbonated in the fermenter? This is my first batch of hard cider and it has been in the primary for over 2 weeks and the air lock has quit bubbling for about a week now. I checked the gravity and it is 1.004 and a ton of carbonation. Of course I did like I always do with brewing I put in 5 oz of sugar in 2 cups of water bring to a boil for 5 min then cool it down to room temp dump in 1/2 tsp of CBC 1 yeast, but with all that carbonation I left a ton of head space for pressure in my 22 oz bottles the entire neck is air... hopefully I don't have beverage bombs... lol I put them all in the basement just in case they decide to blow. Crazy never seen or dealt with anything like this before.

@@TheBruSho I couldn’t find your email and I’m not on discord, so I’ll post here. My wife makes an amazing cranberry - orange jello salad at Thanksgiving and Christmas. She blitzes fresh cranberries and a whole orange (peel still on) in a food processor and then uses either cherry or pomegranate jello. Also adds some sugar. I would love to replicate with a cider but don’t have a clue where to start. I know the easy way would be to buy extracts and figure out ratios but what kind of fun is that? Any advice? 🙏👍🏻
@TheBruSho3 жыл бұрын
@@mdswan47 that sounds amazing. What I would probably do is add some cranberry juice to the apple juice. Maybe only 25% of the total juice. Then I’d add some orange zest into the fermenter and let it ferment with the zest in it. Then if you want it a bit sweeter I would stabilize and maybe backsweeten with more cran juice to punch that flavor up. Good luck and let me know how it turns out
