Caramelized Mushrooms with Garlic
Recipe:
8 ounces of white mushrooms sliced thick
2 or 3 garlic cloves minced
2 tablespoons olive oil
1 tablespoon butter
1 tablespoon coconut aminos (or soy sauce)
In a large frying pan on medium heat add olive oil and butter and mix to coat the pan. Spread the garlic evenly over the pan then add mushrooms and spread out so there is only one layer. (you can add the coconut aminos at this point or at the end. I prefer the end) Allow to cook for about 4 minutes without stirring. After 4 minutes flip a mushroom in the center of the pan over to see if it has caramelized. If it has then flip the rest of the mushrooms over and allow to cook undisturbed for another 4 minutes. Remove from heat and add the coconut aminos and allow to simmer for about a minute. Ready to serve.

I had always heard if your garlic cooks long enough to get caramelized it will become very bitter??

Probably better off not putting them in the pan until much later in the cooking process.

3:12, lookin carmelized,,,,uh, no, the garlic flakes are burnt, dude...whatever floats the boat i guess.........

That looks to me like burning garlic. Hm... not sure if this is what one would want... On top of that, burnt food is highly carcinogenic.

Do you two know why Dr. Gundry allows Bel Gioioso cheeses from Denmark, Wisconsin? Is he thinking it's made in Denmark? Because it's made in Wisconsin. Pretty confusing. Mushrooms look great!

You two are so adorable. I love how you two have each supported each other throughout this Plant Paradox journey. I just gotta say to Jan - honey, you are one lucky gal. I wish my husband did half what yours does for you. I mean, I have a great hubby, but yours really steps up his game to help you out in almost every way. You got a keeper. He's A #1.

I made these and LOVED them but Dee says they are “too salty.” Obviously there’s no salt in them so I’m confused. Have you ever heard that before and is it the way I’m preparing them maybe? I used all of the same ingredients.

Hey Brian! 😎 Yeah Jann said the same and they can be pretty salty if you add a lot of the coconut aminos sauce. It has a fair amount of sodium. So I don't add any to Jann's when cooking so she can add how much she wants later. 😁

Made this tonight, sans the garlic, and used a small medley of organic mushrooms: trumpet, clamshell and maitake, and added diced scallions, a little bit of sliced onions and shallots, and a little diced serrano pepper for a little kick... yes I like a little heat. 😁 I sautéed all together and used as a topping for my wild rocket arugula salad and it was delicioso!! That coconut amino is a game changer for me (for sautéing and salad dressing) as I've never known what to really do with it. Thank you so much for this recipe idea for sautéed mushrooms!!

2 things, when you saute mushrooms you should start with a liquid not an oil. Once the mushrooms have cooked then you add your oil and increase your heat. While you may enjoy what you call caramelized garlic I think most of us call that burned garlic and it tastes rather bitter. I'm not sure about the diet you're on however using stock is my preferred method of adding liquid and there's plenty of vegetable stocks out there if you don't use chicken or beef. I think you'll find the mushrooms cook up much better adding the oil after they have lost their rawness

I love mushrooms but always have tummy troubles after eating them. Along with onions and cruciferous vegetables which is a shame. I still eat them but really suffer after! 😬

Maybe trying that today. I find mushrooms on there own have a very special taste. I have being frying mine but came on hear to see a more healthier way to eat them.

Wow ! Amazing caramelization! I have shitake and portabello mushrooms that really need to be washed. Can washing them prevent them from becoming nice and caramelized? If so how to remove the excessive dirt?

I wash mushrooms quite frequently and I am still able to get the same caramelization. I try to wash them quickly and then I dry them immediately and then will let them sit on a towel for a few minutes before slicing. Any excess water will eventually evaporate as they cook. I do notice more popping if the mushrooms retained a lot of water from washing. I hope that helps.

@@r1l56me Coconut. Sauteed mushrooms and garlic is one of my favorite things. Adding coconut to anything should be considered a crime against nature. Example: Mounds Candy bars have never been a big seller. They have never sold better than people who've never actually tried them, mistaking them for a REAL candy bar. Coconut is simply one of those Survival Foods that one is forced to eat when stranded on a desert island. Real food should NEVER be polluted with it's disgusting presence!
