This recipe was great but , mine turned out thicker then yours and it was even thicker when it cooled down do you know why?

It could be a couple different things - too much flour, not enough milk, or the sauce was cooked too long. You can always thin it out when you re-heat leftovers by adding a little bit of milk at a time and stirring until it reaches the desired consistency. Hope that helps!

Thanks for sharing this helpful tip for others! I prefer to leave mine on a low-medium heat before removing so that the cheese will fully melt and create a smoother sauce, but yes you definitely want to avoid cooking it on too high of heat or for too long, which can cause separation.

No, it doesn’t dry out, but it does thicken once you refrigerate it. I recommend adding a little milk the next day when you reheat it, and it brings it back to the same creaminess as when it’s freshly made.

Mornay sauces like this are great and very versatile. Try adding pecorino and parmigiano reggiano instead and use it as a white sauce base in lasagna in place of ricotta.

Helpful hint... Oil or butter your cheese grater on the outside. I use olive oil. Grating goes much easier
