Rum cut with water sugar and lime juice was served on sailing ships for centuries as an antiscorbutic and was given as a daily ration to Royal Navy sailors up until 1970!

Why wouldn’t you use the ice from the shaker before topping the cocktail with ice?

Ice from the shaker is basically already melting and will dilute the drink much quicker than adding fresh ice. This is why you shake and strain over / into fresh ice in general and then top with more fresh ice to fill the glass, if needed. Using the ice from the shaker is called a "dirty dump" and leads to inconsistent results in your drinks.
